If you want a simple and versatile lunch, try this simple and healthy 3-Way Veggie and Bean Lunch Bowl. Prep ahead for the week and portion out into containers so its easy to grab n go. I love serving in a tortilla or our quick and simple homemade pita bread. Store in the fridge and if you leave the dressing off and only add as you eat, it will stay fresh and ready to go all week long!

3-Way Veggie & Bean Lunch Bowl
Servings: 8
Ingredients
- 15 1/2 oz Canned chickpeas (rinsed and drained)
- 15 1/2 oz Canned white beans (rinsed and drained)
- 8 oz Feta cheese (drained and chopped)
- 2 Cucumber (washed and diced small)
- 2 cup Tomato (chopped small)
- 1/2 cup Banana pepper (diced)
- 2 Peppers (I did red and orange, diced small)
Dressing
- 1/4 cup Olive oil
- 1/4 cup Lemon juice
- 1 tbsp Dijon mustard
- 2 tbsp Honey
- 1 tsp Salt and pepper (each)
- 1/2 tsp Garlic powder
- 1/2 tsp Dried basil
Instructions
- Dressing
- Add 1/4 cup Olive oil, 1/4 cup Lemon juice, 1 tbsp Dijon mustard, 2 tbsp Honey, 1 tsp Salt and pepper, 1/2 tsp Garlic powder, 1/2 tsp Dried basil to a mason jar and shake well. Set aside or refrigerate if making in advance.
Salad
- In a large bowl, add drained 15 1/2 oz Canned chickpeas 15 1/2 oz Canned white beans . Then add in 8 oz Feta cheese , 2 Cucumber , 2 cup Tomato, 1/2 cup Banana pepper , 2 Peppers, diced up in to similar sizes.
- If you want to add more protein, add in some diced chicken if you have any on hand or you can cube up some uncured turkey lunch meat.
- Add dressing as you are about to eat.
- How to eat: its called 3-Way Salad because you can enjoy this over rice, lettuce, or in a wrap! Versatile depending on how hungry you are that day and what you prefer.

- Add any other veggies you like
Storage
- Keep in mason jars for up to 1 week. DO NOT add dressing while storing. Add dressing right before serving.
