Apple & Flax Seed Morning Granola Bars

Mornings can be so busy, its hard to get a nutritious breakfast in. For a simple grab n go option, try these Apple & Flax Seed Morning Granola Bars! We love making a big batch of these at the start of the week and packing for breakfast on the go or after school snacks before the kids activities.

Apple & Flax Seed Morning Granola Bars

Ingredients

Granola Bar

  • 2 cup Old fashioned oats
  • 1 cup Einkorn flour  (see note below)
  • 1 tsp Sea salt
  • 1 cup Coconut sugar
  • 1/3 cup Ground flaxseed
  • 2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/2 cup Butter (melted)
  • 1/2 cup Applesauce
  • 2 Egg

Drizzle (Optional)

  • 2 tbsp Butter (melted)
  • 1/2 cup Powdered sugar
  • 2 tbsp Milk (any milk works here)
  • 1/2 tsp Cinnamon

Instructions

Granola Bars

  • Add 2 cup Old fashioned oats, 1 cup Einkorn flour , 1 tsp Sea salt, 1 cup Coconut sugar, 1/3 cup Ground flaxseed, 2 tsp Cinnamon, and 1/4 tsp Nutmeg to a large bowl. Mix.
  • Melt 1/2 cup Butter, add to separate bowl. Then add 1/2 cup Applesauce and 2 Egg. Mix well. Add to dry ingredients and mix.
  • Grease a 9x13 inch pan with butter or line with parchment paper. Press mixture evenly into pan, bake at 350 degrees for 20-22 minutes until golden brown.
  • Remove from oven and cool. Once cooled, remove from pan and slice into bar shape!

Make Drizzle

  • Combine melted 2 tbsp Butter, 1/2 cup Powdered sugar, 2 tbsp Milk, and 1/2 tsp Cinnamon. Drizzle over cooled, sliced, granola bars. Store in airtight container. Perfect for breakfasts on the go or snacks.

Notes

Einkorn Flour
  • You can use all purpose flour, just use 3/4 cup instead of 1 cup.
Reheat
  • Its best to let these come to room temp on the counter, otherwise they can become dry. Set out overnight and ice right before eating.
