Apple Granola Snack Cups

A perfect after school snack or a quick grab n go breakfast are these Apple Granola Snack Cups. Loaded with protein from the yogurt, naturally sweetened, and full of fiber these granola cups will keep you or your kids full and focused for hours! We love prepping these ahead and storing in the fridge. Buy your favorite granola or make our easy homemade version. Then when we are in a hurry they are ready to grab n go! All you need is a spoon and you can dig in!

Apple Granola Snack Cups

Ingredients

Yogurt Base

  • 32 oz Plain yogurt
  • 1/2 cup Maple syrup

Warm Apple Mix

  • 4 Apple  (peeled and chopped)
  • 3 tbsp Butter
  • 1/4 cup Coconut sugar
  • 1/2 cup Water
  • 1 tbsp Ground cinnamon
  • 1/4 tbsp Clove
  • 1/8 tbsp Nutmeg
  • 1 cup Homemade granola (use apple cinnamon granola recipe or you can buy)

Instructions

Cooked Apple Mixture

  • Preheat large skillet, add 3 tbsp Butter. Then add 4 Apple  peeled and chopped, 1/4 cup Coconut sugar, 1 tbsp Ground cinnamon, 1/4 tbsp Clove, and 1/8 tbsp Nutmeg.
  • Bring to sizzling then add 1/2 cup Water, cover and let cook for 10-15 minutes of low, stirring occasionally. Once cooked, mash down apples to a chunky applesauce. Allow to cool.

Assemble

  • In separate bowl, mix 32 oz Plain yogurt and 1/2 cup Maple syrup. Layer mason jar cups starting with yogurt, then apples, then granola. Repeat layering once more and either store in fridge or freeze!

  • I used the homemade apple cinnamon granola recipe. You can make this or use your favorite store bought version.
