Balsamic and Feta Roasted Carrots with Fresh Thyme & Honey

When planning a meal for our families, sides can often become an afterthought. At least at our house. I can’t count how many times I’ve just tossed some frozen broccoli or carrots on a sheet pan and called it good. Most of the time, it is what it is. But sometimes I want a really good side dish that compliments the meal. These balsamic roasted carrots with feta cheese are incredibly flavorful and easy to make! Using simple ingredients, it’s the perfect way to compliment any meal!

One thing I love about this recipe is using whole carrots! These are much less expensive at the grocery store than baby carrots and have so much flavor! This is a great side dish to use for the holidays, Friendsgiving, a friend gathering, or just to spice up a weeknight! Its my favorite way to eat carrots these days.

The ingredients are a delightful combination of lots of fresh thyme, local organic honey, olive oil, balsamic glaze, and crumbled feta cheese. The natural sweetness of the carrots is complimented so well while roasting. They develop an almost caramel like flavor during the process.  The fresh herbs and other ingredients are a perfect way to highlight the natural goodness!

Ingredients

  • 10-12 larger carrots
  • 3-4 tbsp olive oil
  • ​Large pinch of salt
  • 1/2 tsp black pepper
  • 1/4 c raw organic honey
  • 1-2 tbsp fresh thyme ( or 1-2 tsp dried thyme)
  • 1/2 c crumbled feta cheese
  • 1/4 c balsamic glaze

Directions

Preheat the oven to 400 degrees fahrenheit. Add a few drops of olive oil to a baking sheet. Peel the carrots and wash them off well. This root vegetable needs to be washed well, don’t skip that step.

Once the carrots are peeled, toss onto the baking sheet and add 3-4 tbsp olive oil, large pinch of salt, black pepper, raw organic honey, and fresh thyme (or dried). Toss these around until the carrots are all coated evenly in mixture. Then make sure the carrots are spaced in an even layer on the baking sheet. Layering will not get the caramel flavors as much on the carrots.

Toss in the oven for 15-20 minutes. After this take out and toss around carrots, giving each side an opportunity to get all brown and caramel! Place back in the oven for another 10-15 minutes until carrots are soft, and golden brown. Cooking time in total should be anywhere from 30-40 minutes but keep an eye as all ovens will roast a bit different.

To finish this delicious side dish, grab the crumbled feta and toss on top of the carrots. Place back in the oven for another 2-3 minutes, just to warm the feta. Once you remove from the oven, drizzle over the balsamic glaze! You are ready to serve!

Next time you are at a loss for what to bring to a gathering, holiday party, or to make for a weeknight meal, give these delicious balsamic carrots with feta a try! It’s the perfect side dish and goes with quite a few main courses! The ingredients are so simple and the flavors are unmatched! Its an easy cleanup as it all is done on the sheet pan, which is an added bonus!

To make it fancy add to a serving platter and garnish with some more fresh thyme or other fresh herbs. It will be a huge hit! Hope you enjoy!

Variations

You can sub out thyme for Italian seasoning, basil, oregano, or any other herb you prefer! The base of this is super versatile! If you like carrots but want to add in some other items, you can try brussels sprouts as well, which would go well with the other flavors.

If you don’t have honey you could use a bit of pure maple syrup or brown sugar if that is all you have. I prefer honey but it is an easy swap!
