Best Breakfast Egg Cups

One of the easiest recipes to make ahead for easy mornings are these best breakfast egg cups. These are so easy to customize and even easier to eat. They have a perfect soft texture and I love adding in extra protein like sausages and some added veggies for a full and complete meal. Top with your favorite cheese and enjoy these delicious egg cups that will fuel your morning well.

Best Breakfast Egg Cups

Ingredients

  • 12 Egg
  • 1/2 Cottage cheese
  • 1/2 Sea salt
  • 1/4 Black pepper
  • 1 Mix ins  (see note below )

Instructions

  • Preheat oven to 350.
  • In blender, add 12 Egg, 1/2 Cottage cheese, 1/2 Sea salt, and 1/4 Black pepper. Blend until smooth.
  • Grab muffin trays, and I prefer to line with silicone molds but any non stick paper will do!
  • Get your other 1 Mix ins  (like sausage, cheese, ham, veggies, etc.) ready. Fill muffin tins 2/3 -3/4 of the way full. Keeping in mind add ins.
  • Put in the adds ins and bake for 15-18 minutes. Until muffins are set and souffle out of muffin cups.
  • Eat right away or you can follow prep instructions above to store!

Notes

Mix ins
  • Use anything your family likes here. Examples are favorite veggies, cheeses, bacon, sausage, etc. Just make sure the meat mix ins are cooked before adding.
Reheat
  • Preheat the oven to 350f and place on a parchment lined baking sheet for about 10-15 minutes. You can also thaw in the fridge overnight and heat at 30 second intervals.
