Best Chia Morning Muffins

The perfect grab n go breakfast for busy mornings are these best chia morning muffins. Full of good for you ingredients that will keep you full and focused all morning long. We love making a double or triple batch of these for the week and freezing. They quickly reheat in the oven while you are getting ready so you can easily grab and run! We hope you enjoy!

Best Chia Muffins

Ingredients

  • 3 cup Einkorn flour (see note below)
  • 1 cup Coconut sugar
  • 1 tsp Salt
  • 2 tbsp Chia seeds
  • 3/4 tsp Baking soda
  • 2 Egg
  • 1/3 cup Olive oil
  • 1/4 cup Maple syrup
  • 1/4 cup Plain yogurt
  • 3 tbsp Milk
  • 2 Zucchini  (small, grated)
  • 2 Carrot  (small, grated)
  • 1 tsp Vanilla extract

Instructions

Make Muffin Batter

  • In a large bowl, add in 3 cup Einkorn flour, 1 tsp Salt, 1 cup Coconut sugar, 3/4 tsp Baking sodaa, and 2 tbsp Chia seeds. Mix well. Set aside.
  • In a separate bowl, add in 2 Egg1/3 cup Olive oil, 1/4 cup Maple syrup, 1/4 cup Plain yogurt, 3 tbsp Milk, 2 Zucchini , 2 Carrot , 1 tsp Vanilla extract Whisk well. Then combine the two bowls and fold the ingredients together until no clumps of flour are seen.

Bake

  • Preheat oven to 350. Line 2 muffin tins with parchment or silicone liners. Use a cookie scoop or 1/4 c and scoop the muffin mix into the tins. Should get about 18 muffins total.
  • Bake for 20-22 minutes. Until center is set and muffins are golden brown.
  • Enjoy right away or follow prep instructions to stock up your freezer!

Notes

Einkorn Flour
  • You can use all purpose flour here as well. Just use 2 1/2 cups instead of 3.
Mixing
  • Do not overmix your muffin batter or they will not rise well. Gently fold in the wet and dry and you will be golden!
Egg Substitute
  • You can substitute a flax egg here and it works well! Just mix 1 tbsp ground flax seed with 3 tbsp water. Let it set until its a gel consistency. This mixture will replace 1 egg. Use amount needed!
