Best Ever Summertime Pasta Salad

Summertime is right around the corner! Longer days, warm sunshine, and lots of delicious summertime food. For us this means lots of recipes that require little to no cooking inside. I also love recipes that can be served cold! This Best Ever Summertime Pasta Salad checks all the boxes!

Its light, customizable, and has the right balance of flavors.

Adding in all the veggies is a great way to eat your colors for the day! I love that you can literally use any veggies you have on hand! Switching up the veggies, proteins, and even cheese options will make this dish different every time you make it. I used leftover chicken tenders here but you can also use steak, pork, or even do a veggie option with chickpeas.

The dressing is super quick and easy! Most of the ingredients you likely already have on hand, no need to buy! Most store bought dressings use seed oils that are not a great option to eat often. Making yourself will ensure you chose the healthiest option for you and your family.

This recipe holds well in the fridge for multiple days and in my opinion, gets better the longer it sits! Take it for lunch the next day, pack with your kids in a lunch box for any camps or activities they might have this summer. So versatile!

I used a gluten free pasta but you can use whatever kind of pasta you and your family like!

Ingredients:

Adjust Servings
16oz pasta of choice ( i used a gf penne)
2 c cooked protein of choice, chopped.
3c veggies of choice, chopped
1block cheese of choice ( used monterrey jack here)
1/4c evoo or avocado oil
2 lemons, juiced
2tbsp honey
1tsp dijon mustard
1tsp minded garlic
1 tsp italian seasoning
1tsp salt
1/2tsp pepper

Directions

1.
Make pasta
Cook pasta, drain, rinse with cold water, drizzle with oil so it doesn't stick, allow to cool Chop veggies Chop protein of choice Chop cheese Toss all together in bowl
Mark as complete

Make Dressing
Add all ingredients into a mason jar, shake well Dump over pasta Allow to chill for a few hours or serve right away Will last a few days covered in the fridge Enjoy!
