Breakfast Enchilada Casserole

Ingredients
- 5 Flour tortilla (can use our homemade recipe)
- 1 Onion (Chopped)
- 1/2 Green pepper (Chopped)
- 1/2 Red pepper (Chopped)
- 16 oz Breakfast sausage (Naturally is the type we get- free from preservatives)
- 6 Egg (scrambled)
- 3 cup Shredded cheddar cheese (Shred from a block)
- 2 1/2 cup Enchilada sauce (we make our own or buy 365 organic)
Instructions
- Grease a 13x9 dish and line with parchment paper.
- Layer the pan with tortillas and pour 1/2 cup of enchilada sauce on top.
- Sprinkle sausage on top of the sauce and then on top of that sprinkle onions, red peppers and green peppers.
- Sprinkle on 1 and 1/2 cups of shredded cheese. Pour remaining sauce on top. Top with tortillas and sprinkle remaining cheese on top.
- Cover with aluminum foil and freeze. If you want to bake right away bake at 350 for an hour.
Notes
Reheat
- Preheat oven to 350 f. If you made and froze, place squares on sheet tray and bake for15-20 minutes until warm in the center. To speed this up, you could thaw the pieces in the fridge overnight.
