Make Ahead Breakfast Pockets

Do you ever wish you could bottle up your favorite eggs, bacon, sausage, and cheese into an easy portable pocket? Us too! Which is why we made these delicious make ahead breakfast pockets. We love how portable these are and customizable. You can add any of your favorite breakfast meats, eggs, cheeses, and veggies into these and always have a different breakfast pocket. We use our homemade dough for these that you can make ahead or you can buy your favorite kind. Our recipe is below. We hope you love them!

Breakfast Pockets

Ingredients

  • 1 Homemade Dough make or buy
  • 12 Egg (scrambled and cooked)
  • 2 cup Shredded cheddar cheese (or any variety you like)
  • 2 cup Add ins your choice of sausage, bacon etc.
  • 4 tbsp butter

Instructions

  • Thaw 1 Homemade Dough, make fresh, or buy your favorite brand
  • Divide into 12-14 pieces, roll into balls, set aside on floured surface
  • Preheat oven to 375f
  • Place a medium size skillet over medium heat on the stove.
  • Scramble 12 Egg in a pan, set aside.
  • Grate 2 cup Shredded cheddar cheese, prepare 2 cup Add ins like sausage, bacon, or veggies .
  • Once all components are ready, flour the counter and roll out pieces of the dough until they are in a flat circle, about 6-8 inches wide.
  • Fill with eggs, cheese, and any other mix ins by placing on one half of the dough.
  • Then fold the top over until it reaches the bottom. If the dough is sticky here, don't be afraid to use some extra flour to counter or on top of pockets.
  • Once folded, crimp edges with a fork so they are closed, place on a silicone lined baking sheet. Poke a hole or two into the top as well to release steam.
  • Once all are assembled, brush with 4 tbsp butter melted and bake for 18-20 min, til golden brown.
  • Allow to cool for a few min, then enjoy!

Notes

Add ins
  • You can use any meats or veggies you and your family like to add in with the eggs
Reheat
  • Preheat oven to 350 f. Place on a parchment lined baking sheet. Bake for 15-20 minutes to reheat through.
