Do you enjoy hash browns in the morning? You will love these! The best part is the protein can go right in them so you have a true grab and go breakfast. Crispy on the outside and soft on the inside, savory instead of sweet.

Breakfast Potato Puffs
Servings: 12
Ingredients
- 9 slice Bacon
- 20 oz Frozen shredded potatoes
- 1 tsp Pink himalayan salt
- 1 tsp Garlic powder
- 1 Zucchini (shredded)
- 1 Egg
Instructions
- Preheat oven to 375
- Place a large cast iron skillet over medium heat on the stove.
- Place the 9 pieces of bacon in the cast iron skillet and cook all the way through.
- Remove the bacon and once cooled wipe down the cast iron skillet to remove most of the grease.
- Add in the shredded potatoes and cook until just barely soft.
- In a food processor add the bacon and pulse 30-40 seconds.
- Add in the remaining ingredients and blend until chunky.
- Use a cookie scoop and scoop onto a parchment lined baking sheet.
- Bake for 15-20 minutes. Remove and eat

- Cook in oven at 350 for 10-15 minutes or microwave in 30 second increments until hot and ready to eat.
