Busy Family Potato Soup

The next sports night make this potato soup!
This is the classic potato soup of the 80’s with a healthy upgrade. When you literally need a dump and go meal, this is the perfect one. You can add your own toppings like bacon, ham and cheese to give it an upgrade.
Busy Family Potato Soup

Equipment
- 1 slow cooker
Ingredients
- 30 oz Frozen hash browns (check the label and be sure it is just potatoes (a lot of the cheaper brands are just potatoes))
- 30 oz Frozen broccoli, cauliflower, carrots blend
- 1 Onion (Chopped)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Pink himalayan salt
- 32 oz Chicken bone broth
Slur
- 2 cup Whole milk
- 2 tbsp Einkorn flour
Final Step
- 2 cup Sharp cheddar cheese (shredded from a block)
Instructions
- In a slow cooker, add in onions, potatoes, vegetable blend and seasonings.
- Add in the chicken broth and give a good stir.
- Mix together the milk and flour and pour in.
- Cover with a lid and cook over high 2-4 hours or low 6-8 hours.
- Once complete, add in cheddar cheese and stir until melted.
Notes
Reheat
- Place in the refrigerator overnight.
- Place a sauce pan over medium heat and pour in the soup.
- Stir frequently until heated through
