Chicken and Stars Soup Dupe

My daughter’s favorite lunch at school is when I send her with chicken and stars soup. But there was a week where every can I sent her had ZERO stars in it. So we decided to make our own Chicken and Stars Soup Dupe. It’s hearty, easy to prep ahead, and perfect for lunch or dinner served with some crusty bread. We hope you love it!
Chicken and Stars Soup Dupe
Servings: 12
Ingredients
- 1 Onion (vidalia is best but any white onion would work )
- 2 Carrot (large, peeled and diced)
- 1 tbsp Garlic (fresh, peeled and chopped )
- 1 1/2 lb Chicken breast (diced into small cubes)
- 1 tbsp Pink himalayan salt
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Dried basil
- 1 1/2 tsp Dried oregano
- 12 cup Chicken broth
- 8 oz Stelline pasta (add 10 oz if you want is a bit heartier, we love jovial brand)
- 2 tbsp olive oil
Instructions
- In a large stock pot, heat 2 tbsp olive oil over medium heat.
- Then add 1 Onion , 2 Carrot , and 1 tbsp Garlic chopped .
- Saute for a few minutes.
- Then add in 1 1/2 lb Chicken breast diced. Stir well. Add in 1 tbsp Pink himalayan salt, 1 tsp Garlic powder, 1 tsp Onion powder, 1 tsp Dried basil, and 1 1/2 tsp Dried oregano. Mix well until chicken is cooked through, about 4-5 minutes.
- Then add in 12 cup Chicken broth and bring to a boil.
- Once boiling add 8 oz Stelline pasta
- Cook as until pasta is done, about 10 minutes, covered on low heat.
- Serve with a fresh sprinkle of parmesan cheese and with our delicious homemade 30 minute garlic knots!
Notes
Storage
- Store soup in airtight container for up to 4 days. You can freeze it in mason jars or other individual containers. Place in fridge overnight to thaw and reheat in microwave or in a pan on the stove.

- Based on your pasta choice, you can make this gluten free or not!
