Chicken Parmesan Pizza Pockets

Chicken Parmesan Pizza Pockets

Equipment

  • 1 small bowl
  • 1 medium bowl
  • 1 baking sheet
  • parchment paper

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 1/2 lb Boneless skinless chicken breast
  • 1 Zucchini (finely chopped)
  • 1/4  tsp Pink himalayan salt
  • 14 1/2 oz Organic tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 2 Whole garlic cloves (Pressed)
  • 2 cup Parmesan (freshly grated parmesan)
  • cup Mozzarella (mozzarella (grated off the block))
  • 2 Pizza dough (batches of healthier homemade)

Instructions

  • In a skillet over medium heat add in the 2 tbsp Extra virgin olive oil. Add in the 1 1/2 lb Boneless skinless chicken breast chopped into small pieces and1 Zucchini chopped into small pieces. . Toss in a 1/4  tsp Pink himalayan saltt and cook until both the chicken and the zucchini are tender.
  • Pour in the 14 1/2 oz Organic tomato sauce,1 tsp Italian seasoning, g1/2 tsp Garlic powder, 1/2 tsp Onion powder and 2 Whole garlic cloves minced. Let simmer
  • Roll the 2 Pizza dough batches into 12 balls.
  • Combine the 2 cup Parmesan 1  cup Mozzarella in a small bowl.
  • Flour your prep surface area and press a ball into a rectangle. Place 2 TBSP. filling and 1 TBSP. cheese into the middle of each square. Fold like you would a hot pocket and place onto a parchment lined baking sheet.
  • To bake, spray with extra virgin olive oil. Sprinkle the top with any remaining cheese and place in an oven preheated to 425 for 15-20 minutes until the crust is golden.
  • Serve and enjoy!

Notes

  • To freeze- Flash freeze in the freezer for an hour to 2 and then place wrap in parchment paper and store in a ziploc freezer safe bag.
REHEAT/COOK IF FROZEN
  • Thaw pizza dough in the fridge the night before use.
  • If you made and froze the pockets before baking, place on parchment lined sheet tray and bake for 20-25 minutes at 425 degrees
