Chicken Salad Lettuce Wraps

One of my favorite things to grab when I’m out grocery shopping at the Health Food store is their chicken salad. Its so easy when I’m out to sneak in some protein if I’m out running around. So I had to make my own version and made these delicious and flavorful Chicken Salad Lettuce Wraps. They have tons of textures and flavors and go so well on crackers, wraps, bread, or these lettuce wraps.
Chicken Salad Lettuce Wraps
Servings: 10
Ingredients
- 2 lb Chicken breast (boneless, skinless)
- 1 Lemon (juice and zest)
- 1 1/2 cup Mayonnaise (favorite brand or our easy homemade version)
- 1/2 cup Green onion (finely diced)
- 1/2 cup Grapes (chopped into fourths)
- 1/2 tsp Black pepper
- 1 tsp Pink himalayan salt
- 1/3 cup Pecans (diced and toasted)
- 2 tbsp Honey
- 10 Romaine (Use the leaves)
Instructions
Cook Chicken
- Cook 2 lb Chicken breast in a pan in the oven at 350 degrees for 20-25 minutes until cooked through
- Set aside to cool for 5-10 minutes
- Toast 1/3 cup Pecans at 350 for 8-10 minutes on sheet tray, cool.
Make Dressing
- To a jar or large bowl, add 1 1/2 cup Mayonnaise , 1 Lemon, 2 tbsp Honey, 1 tsp Pink himalayan salt, 1/2 tsp Black pepper, and 1/2 cup Green onion. Mix well. (leave our green onion if making in advance. Add day of use)
Assemble
- Separate and wash 10 Romaine lettuce leaves
- Dice up chicken, add to bowl with dressing
- Add green onion if you haven't already
- Add in 1/2 cup Grapes and toasted, cooled pecans
- Add chicken to salad to lettuce leaves and enjoy! A perfect light, summer meal. Serve with a fruit salad or roasted veggies
