Chocolate Chip Granola Cups

Most days my kids end up staying after school for a few hours for various sports, games, or clubs. I love making a big batch of these Chocolate Chip Granola Cups for the week so send in their backpacks so they always have a healthy, filling snack on hand for them. Made with clean ingredients, you will feel good giving these to your kids and they will gobble them up.
Chocolate Chip Granola Cups
Servings: 12
Ingredients
- 1 cup Einkorn flour (see note for all purpose flour)
- 2 cup Quick cooking oats (can use old fashioned, they will just have more texture)
- 1/2 cup Coconut sugar (can omit if you like less sweet)
- 1 tsp Pink himalayan salt
- 1/4 cup Ground flaxseed (optional, adds fiber and good fats)
- 2 Egg
- 1/2 cup Maple syrup (can use honey as well)
- 1/2 cup Butter (melted)
- 2 tsp Vanilla extract
- 1 1/2 cup Chocolate chips
- 1/4 cup Sprinkles (optional, just adds fun)
Instructions
- Preheat oven to 350 degrees, line muffin tins with parchment or silicone liners
- Add 1/2 cup Coconut sugar, 2 Egg, 1/2 cup Maple syrup, 1/2 cup Butter, and 2 tsp Vanilla extract. Mix well. Then add 1 cup Einkorn flour, 2 cup Quick cooking oats, 1 tsp Pink himalayan salt, 1/4 cup Ground flaxseed, 1 1/2 cup Chocolate chips. Fold ingredients together until well incorporated.
- Fill muffin tins about 3/4 full with granola mixture. Top with 1/4 cup Sprinkles evenly distributed if desired.
- Bake for 16-18 minutes, until golden brown and set. Follow prep instructions for storing! Enjoy!
Notes
Einkorn flour
- Use 3/4 cup all purpose flour if desired over einkorn
Sprinkles
- We love supernatural baking, their sprinkles are free of artificial dye
