Cinnamon and Vanilla Scone w/ Maple Glaze

Scones are not something we have often at our house but when we do have these little treats we love the Cinnamon and Vanilla Scone w/ Maple Glaze. The flavor combination is truly out of this world and these go great with a cup of tea or coffee. Serve these with some eggs or sausages and you will have a full and complete breakfast ready to go.
Cinnamon and Vanilla Scone w/ Maple Glaze

Ingredients
Scone Mix
- 3 cup Einkorn flour (see note for all purpose use)
- 1 tsp Salt
- 2 tsp Baking powder
- 3/4 cup Cane sugar
- 1/4 cup Coconut sugar (can use more cane sugar)
- 2 tsp Vanilla extract
- 3/4 cup Buttermilk (see note)
- 1/2 cup Butter (cold, grated on cheese grater into small pieces)
Maple Glaze
- 2 tbsp Butter (melted)
- 2 tsp Maple extract
- 1 tsp Salt
- 2 cup Powdered sugar
- 2 tbsp Milk
Instructions
- Preheat oven to 375, line a sheet tray with parchment paper
- In a large bowl, add 3 cup Einkorn flour, 1 tsp Salt, 2 tsp Baking powder, 3/4 cup Cane sugar, and 1/4 cup Coconut sugar. Mix well
- Grate 1/2 cup Butter on a cheese grater, add to dry ingredients.
- Incorporate cold, grated butter into flour mixture until it forms a course crumb
- In a separate bowl, add 3/4 cup Buttermilk, 2 tsp Vanilla extract and whisk well
- Add to flour and butter and mix until well incorporated but do not overmix!
- Place dough on a floured counter and shape into a circle
- Slice into 12 pieces, place spaced out on lined parchment paper
- Bake at 375 for 30-35 minutes until golden brown and set
- Remove from oven and cool
- While cooling, in a small bowl, add 2 tbsp Butter, 2 tsp Maple extract, 1 tsp Salt, 2 cup Powdered sugar, and 2 tbsp Milk. Whisk well
- Drizzle glaze over cooled scone and enjoy
Notes
All Purpose Flour
- Use 2 1/2- 2 3/4 cup all purpose flour if desired
Buttermilk
- You do not need to buy buttermilk, add 1 tbsp of white vinegar into the milk, let it set for 5 minutes and use!
