Cinnamon Roll Pizza

Cinnamon Roll Pizza

Equipment

  • 2 bowls
  • 1 sheet pan
  • 1 large 8 qt. pot

Ingredients

  • 2 cup Whole milk
  • 1/2 cup  Butter
  • 1/2 cup Sugar
  • 2 1/4 tsp Dry yeast
  • 6 cup Einkorn flour (divided)
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 2 tsp Pink himalayan salt

Mix in cinnamon mixture

  • 1/4 cup Cane sugar
  • 2 tbsp Cinnamon
  • 1/4 tsp Nutmeg

Butter Spread

  • 1/2 Butter (melted)
  • 1 tbsp Cinnamon
  • 1/4 cup Granulated sugar

Cream Cheese Icing

  • 8 oz Cream cheese
  • 1 tsp Vanilla paste
  • 1/2 cup Cane sugar
  • 2 tbsp Whole milk

Instructions

  • In a large pan (8 qt) over medium heat combine 2 cup Whole milk, 11/2 cup  Butter and 1/2 cup Sugar. Get it hot so it is scolding but not boiling.
  • Remove from heat and let cool to 110f.
  • Add in the 2 1/4 tsp Dry yeast.
  • Let activate (10 minutes or until bubbly).
  • Add in 4 cups of einkorn flour (out of the 6 cup Einkorn flour and mix together well. Place the lid on and let rise 1 hour.
  • Once it has risen, add in the additional 2 cups of einkorn flour, 1/2 tsp Baking powder, 1/4 tsp Baking soda and 2 tsp Pink himalayan salt. Mix well.
  • At this point, place the lid on and let rest in the refrigerator an hour. You can leave it in the fridge up to 2 days.
  • Remove and add in the 1/4 cup Cane sugar, 2 tbsp Cinnamon and 1/4 tsp Nutmeg. Mix well.
  • Flour the countertop and roll out into a rectangle. Roll to 1/2 in. to 3/4 inch thick. Make the edges a little higher just like you would a pizza.
  • Place parchment paper on a sheet pan (with slight edges and place the dough on the sheet pan.
  • Mix together the 1/2 Butter melted, 1 tbsp Cinnamon and 1/4 cup Granulated sugar.
  • Pour onto the dough rectangle.
  • Bake for 16-20 minutes at 350.
  • While it is baking, Mix together the frosting. 8 oz Cream cheese, 1 tsp Vanilla paste, 1/2 cup Cane sugar and2 tbsp Whole milk. with a beater.
  • Remove from the oven and let rest 5 minutes.
  • Spread the frosting on while the base is still warm.
  • Slice into 16 squares and serve.

Notes

  • You can use regular all purpose flour instead of all purpose einkorn flour.  Just reduce each cup you use by 1/4 cup of flour.
