Chewy Corn Krispies

A nostalgic treat from childhood with an extra crispy crunch! When we are in the mood for a gooey rice krispy treat we love subbing the usual puffed rice cereal for these delicious Chewy Corn Krispies! The corn flakes are packed with a thicker texture and a ton of flavor! My kids love these just as much if not more than the classic rice krispy treats! We hope you love them as much as we do. Corn Krispies

Ingredients

  • 4 cup Vanilla bean marshmallow fluff (see our attached recipe)
  • 1 lb Corn flakes (or 7 cups total)
  • 1/4 cup Butter (melted)

Instructions

Bake Corn Flakes

  • Preheat oven to 350 degrees, using 2 sheet pans, spread out 1 lb Corn flakes into a thin layer. 
  • Place in oven and bake for 8-10 minutes until dark golden in color. Cool completely. 

Make Marshmallow fluff

  • Make the vanilla bean marshmallows and follow the instructions until you are done whisking it in the mixer or use your favorite store bought version

Assemble

  • Add baked corn flakes into a ziploc and crush or you can do this in a food processor. Just don't over crush into a powder. 
  • Once cereal is crushed, line a 9x13 inch pan with parchment paper. 
  • In a large bowl, add baked corn flakes, 4 cup Vanilla bean marshmallow fluff from recipe, and 1/4 cup Butter. Mix well. 
  • Add mixture into 9x13 pan and press down evenly and firmly. Allow to stand at room temp for 2 hours 
  • Remove parchment paper and slice into squares, should get about 18. 
  • Enjoy!

Notes

Storage
  • Store corn krispies in a ziploc bag or airtight container. will last about 4-5 days.
Extra marshmallow fluff
  • You can add the remaining marshmallow fluff to a 8x8 pan lined with parchment and make some marshmallows. No need to waste it!
