Cosmic Brownies

 

Homemade cosmic brownies with thick, fudgy chcolate base topped with chocolate frosting and bright natural dye sprinkles.

Cosmic Brownies

Equipment

  • 1 9x9 baking dish
  • parchment paper
  • 2 bowls
  • Avocado oil or Extra virgin oil for greasing pan

Ingredients

  • 1 1/8 cup All-purpose einkorn flour
  • 1/2 cup Dutch processed cocoa powder
  • 1 tsp Arrowroot
  • 1/2 tsp Pink himalayan salt
  • 1/2 cup Butter (melted)
  • 2 Egg
  • 1 tsp Vanilla
  • 1/4 cup Milk
  • 3/4 cup Organic cane sugar
  • 1/2 cup Organic brown sugar

Frosting

  • 1/4 cup Organic heavy whipping cream
  • 3/4 cup Chocolate chips (real good or nestle simple)
  • 1/2 tsp Vanilla
  • 2 tbsp Organic cane sugar
  • 2 tbsp Sprinkles (super natural sprinkles brand is our favorite)

Instructions

  • Preheat the oven to 350 f
  • Line a 9x9 pan with parchment paper and spray with avocado oil. 
  • In a bowl combine 1 1/8 cup All-purpose einkorn flour, 1/2 cup Dutch processed cocoa powder, 1 tsp Arrowroot  and 11/2 tsp Pink himalayan salt
  • In another bowl combine the 1/2 cup Butter (melted), 2 Egg, 1 tsp Vanilla, 1/4 cup Milk,3/4 cup Organic cane sugar and 1/2 cup brown sugar. 
  • Combine the two bowls and beat on medium low for 1 minute. 
  • Pour into the prepared 9x9 pan. Bake in the preheated oven for 20-25 minutes until a toothpick comes out clean in the center. 
  • While that is baking, place a small sauce pan on the stove top. 
  • To the sauce pan over low/medium heat pour in 1/4 c whipping cream.  Add in the 3/4 cup chocolate chips, 1/2 tsp. vanilla and 2 TBSP. cane sugar.  
  • Stir together until melted and remove from heat. 
  • Immediately when you remove the brownies from the oven, pour the sauce over top and spread evenly. 
  • Sprinkle the top with sprinkles. Cool for 15 minutes then slice and enjoy! 

Notes

Swap
  • Swap 1 cup all purpose flour for 1 1/8 cup all purpose einkorn flour.
Salt
  • Be sure to use fine salt. You can also use sea salt instead of pink Himalayan salt
