Cream of Chicken & Rice
Anyone else remember this classic dish from the 90s?! Campbell’s soup, rice, creamy soupy sauce?! I loved this dish as a kid but remade this in a Healthier Homemade version. It was delicious, quick, and easy cleanup as its all in one pot!
I used the premade rice from earlier in the week and heated it in a bowl in the microwave! Super simple and quick!
You can customize this with any of your favorite added veggies that you family loves. I just used broccoli here but skies the limit!

Ingredients:
Adjust Servings
2 lb chicken tenders or thighs | |
2 c milk of choice | |
1/4 c butter | |
1/3 c einkorn flour (1/4 c regular ap flour) | |
1 onion, chopped | |
4 garlic cloves, chopped | |
1tsp salt | |
1/2tsp pepper | |
2tsp italian seasoning | |
4c rice (can use prepped rice from recipe) |
Directions
1.
To Make Sauce
Add onion and garlic to hot skillet, cook 3-4 min until slightly brown
Then combine butter in a skillet until melted
Add flour and stir for 1 min
Add 2 c of milk of choice, stir til thick
Add seasonings and turn off heat, set aside
Mark as complete

Make Casserole
Place chicken on the bottom of a greased 9x13 baking dish
Add broccoli or desired veggies
Add creamy soup mix over top
Top with favorite cheese (we love parmesan here!)
Bake at 350 for 30-35 min
Serve over rice
Mark as complete
