Creamy Banana Oat Bake w/ a Caramel Drizzle

You have guests coming to town for a few days and you hate spending your entire time in the kitchen cooking. Is there a better way to feed a crowd? What are recipes for a large group that are simple, healthy, and delicious?

This is for you!

We love hosting family at our home and living in a little beach town we find the summer time to be hopping at our home! Which we love! But I hate spending all my time in the kitchen while everyone else is enjoying their time together. So I came up with a few recipes we serve that I can prep in advance so we can all spend that quality time together and eat well!

This recipe is a crowd pleaser for sure! The components are so simple to toss together in advance and offer so much flexibility. You can prep these all a few days in advance and in the morning just toss, bake, warm, and eat!

The last time we had company I made this and everyone raved about how delicious this was! If you aren’t a banana fan you could always sub mashed pumpkin and add in some warm clove and nutmeg with the cinnamon to switch it up! Just as delicious!

The caramel drizzle is a treat on top! You could leave this part off and its still delicious on its own but I promise you, it will be worth the few extra minutes. And if you happen to have extra…just drizzle it over your ice cream later.

Ingredients:

Adjust Servings
5c quick oats
2tsp baking powder
1tsp salt
1tsp cinnamon
1c coconut sugar
1/4c avocado oil
4c milk of choice
3 eggs
1tsp vanilla
2 mashed banana, over ripe is best
1/4c maple syrup
1stick butter
1tsp vanilla
1/2 c coconut sugar
1/4c maple syrup
1tbsp flour
1tbsp water

Directions

To Prep Dry Ingredients
You can do this the evening before or a few days before! Combine oats, baking powder, salt, cinnamon, coconut sugar in a bowl or dish. Cover until use.

Prep Wet Ingredients
In a large mixing bowl add avocado oil, milk, eggs, vanilla, mashed banana, and maple syrup. Mix well and set in the fridge until use.

Prep Drizzle
Add 1 stick of butter to a sauce pan. Once melted, add sugar and maple syrup. Let boil a few minutes, about 5. Then combine 1 tbsp of flour and water and whisk to make a slurry Add to sauce and whisk well. Once thickened remove from heat and add vanilla. Store in mason jar in the fridge once cooled until day of use

Bake Day of
Grease a large baking dish, 9x13 or larger. Add wet ingredients to dry ingredients and add to pan Bake at 350 for 30-35 min Once golden brown and set, remove from oven. Warm drizzle in hot water or in microwave Serve a warm slice of oat bake with a healthy drizzle of caramel Enjoy!
