Creamy Tomato Risotto with Chicken

Ingredients
- 3 tbsp Extra virgin olive oil
- 1 1/2 lb Organic boneless skinless chicken breast
- 1 tsp All purpose seasoning (We like Happy Salt)
- 1/2 Onion (finely chopped)
- 2 Garlic (Pressed)
- 1 Zucchini (finely chopped)
- 1 Yellow squash (finely chopped)
- 1 cup Organic arborio rice
- 11/2 cup Chicken broth
- 3 cup Creamy tomato sauce (from component recipe)
Instructions
- In a cast iron skillet over medium heat add in 2 TBSP. extra virgin olive oil.
- Sprinkle the chicken breast with 1 tsp. all purpose seasoning.
- Add to the skillet and sear 7 minutes one side. Flip and seat 7 minutes the other side. Continue cooking until the internal temperature reaches 165 f.
- Remove the chicken from the skillet and add in 1 TBSP. extra virgin olive oil to the skillet.
- Add in the 1/2 onion finely chopped, 1 zucchini finely chopped, 1 yellow squash finely chopped and 2 garlic cloves pressed. Stir until onions caramelize and zucchini softens.
- Add in the 1 cup rinsed arborio rice. Cook for 5 minutes, stirring frequently until the rice turns slightly translucent.
- Add 1/2 cup of warmed chicken broth and stir. Continue cooking until the broth is absorbed and do the same thing with the remaining broth.
- Once all of the broth is absorbed, start add in the the creamy tomato sauce 1 cup at a time. Let it absorb just like you did the broth.
- Once all of the sauce is absorbed, let rest for five minutes with no heat on. Serve and enjoy!
