Crock Pot BBQ Chicken Sandwiches

In the summer I do not like to turn on my oven a ton. SO I will often resort to crock pot or grill recipes as much as I can do eliminate the need for the oven to heat up the house.

This recipe checks all the boxes for our family. Its really convenient since its cooks all day in the crock pot, has the option to either buy healthier items for components or you can use our healthier, homemade recipes. Most of the homemade items can be prepped days in advance and stored in the fridge or freezer.

In our home we try our very best to keep costs low while feeding our bodies nourishing food. This can often not go hand in hand, especially if you add in any allergies you or someone in your family has. But by adding in some quick, homemade items you can get the best of both worlds.

In this recipe, for example, I saved a ton by making my own homemade mayonnaise, BBQ sauce, and homemade buns. With a gluten allergy, this can drive up the cost quick! So, when I take time to make these items, I will often double or triple the batch and use the freezer or fridge to store the extras. This multiplies my efforts, saves, time, and saves money for us.

This recipe is so easy to toss together on a weeknight, especially if you prep in advance some of these items! Ingredients:

Adjust Servings
1 1/2c ketchup
1/4 c worcestershire
2tsp mustard
1/4 c honey
1/4c white vinegar
2tbsp Kinders Woodfired Garlic blend
1pkg cole slaw blend
1/2-2/3 c mayo (can use homemade recipe or store bought)
1 lemon, juiced
2tbsp honey
4 green onions, sliced
2lbs chicken breasts or thighs
1tsp salt
1/2tsp pepper
8-10 Bread or bun of choice

Directions

1.
Make BBQ Sauce
Combine ketchup, Worcestershire, mustard, honey, vinegar, and seasoning blend. Mix well and store in fridge until use.

Prep Cole Slaw
Dump cole slaw mix into bowl Mix together mayo, lemon juice, honey, and add in green onion. Mix well and toss with cole slaw mix. Store in fridge for a few days!

Make Chicken
Place seasoned chicken in crock pot with a bit of broth or water at the bottom Cook on low all day Once done, dump any excess liquid and split with a fork. Add in BBQ sauce and allow to warm a few minutes Place cole slaw, bbq chicken, and any other toppings you like on the bun (we love adding pickles or extra green onion!) Enjoy!
