Croque Monsieur Bites

Equipment
- 1 baking sheet
- 1 bowl
- 1 saucepan
Ingredients
- 4 tbsp Olive oil
- 2 tbsp Honey
- 1 cup Warm water
- 2 1/2 tsp Active dry yeast
- 2 3/4 cup All-purpose Einkorn flour
- 1 tsp Baking powder
- 2 tsp Salt
Cheese and Ham Sauce
- 1 tbsp Butter
- 1 tbsp Flour
- 1 cup Heavy cream
- 1 cup Uncured ham (chopped)
- 1/2 tsp Salt
- 1/2 tsp Mustard powder
- 1 cup gruyere cheese shredded off the block
Instructions
- In a bowl, combine the 2 tbsp Honey, 4 tbsp Olive oil, 1 cup Warm water (between 100f and 110f),2 1/2 tsp Active dry yeast. Let rest until bubbly (about 10 minutes).
- In a separate bowl whisk together 2 3/4 cup All-purpose Einkorn flour, 1 tsp Baking powder, 2 tsp Salt
- Add the flour blend into the yeast mixture and mix 3-5 minutes until well combined.
- Cover with a tea towel and let rest 1 hour.
- While that is resting, heat a skillet over low/medium heat.
- Add in 1 tbsp Butter and melt.
- Mix in 1 tbsp Flour.
- Once a paste forms, add in the 1 cup Heavy cream and whisk until thickened.
- Sprinkle in the 1 cup gruyere cheese .
- Add in the 1 cup Uncured ham,1/2 tsp Salt and 1/2 tsp Mustard powder. Set aside.
- Once the dough mixture is rested turn out onto a floured counter. Knead around 3 minutes.
- Divide into 32 balls.
- Grease small muffin tins with avocado oil.
- Place each ball into the muffin tin.
- Press in the middle so that the edges are higher.
- Spoon 1 tsp. of the cheese mixture into each muffin.
- Bake at 425 f. for 9 minutes.
Notes
- Can be frozen. To freeze, bring to room temperature. While still in the tins, place in the freezer for 2 hours. Remove and place in a freezer safe container.
