Customizable Quiche

We love any recipe that can be customized to fit any crowd of food preferences. This customizable quiche is perfect to prep ahead for a busy week or have on hand if you are hosting friends and family in town. You can add any of your favorite veggies, meat, or even customize the cheese option you put on top. We use einkorn flour for our crust but you can sub all purpose flour if you desire. Customizable Quiche

Ingredients

Quiche Crust

  • 2 1/2 cup Einkorn flour (see note)
  • 1 tsp Sea salt
  • 1 tbsp Coconut sugar
  • 1/2 cup Butter (cold)
  • 4 tbsp Water (start with 4, add 1-2 more if needed to make the dough come together)

Quiche Filling

  • 8 Egg
  • 1/3 cup Cottage cheese
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 cup Asiago cheese
  • 1 Mix ins (see note below)

Instructions

Quiche Crust

  • Preheat oven to 375
  • In food processor, blend flour, salt, sugar, butter, and water until a dough forms. Make sure its still a crumbly dough, you do not want it sticky and wet.
  • Press into a prepared pie or tart pan and bake for 10-12 minutes, until lightly golden brown.

Quiche Filling

  • While baking, in blender add eggs, cottage cheese, salt, pepper, blend well
  • Once tart is done, add in egg mixture, then add in mix ins of choice and cheese
  • Bake for 30-40 min, until center is set. Allow to cool and then remove from pan. Slice into 10 slices and wrap up individually for lunches during the week or enjoy right away.

Notes

Einkorn flour
  • Can use all purpose flour, just use 2 cups instead of 2 1/2 cups
Mix ins
  • Use any veggies, cheese, or meat your family enjoys! I love using ham or chicken sausage and green onion with cheddar cheese.
THAW/COOK IF FROZEN
  • If sliced and frozen individually, toss in oven still wrapped in parchment and foil for 15-20 minutes. If you are cooking from frozen as a whole, add an extra 15-20 minutes to baking time or you can thaw in the fridge the night before then follow baking instructions
