Delicious Homemade Einkorn Flour Graham Crackers

The price of everything has gone up so much but when I look at the price of graham crackers, I just cant bring myself to do it. Partly because my family eats an entire box in a day and partly because I know if I just take a few minutes I can make these myself.

And that’s exactly what I did!

These graham crackers are SO SO good! They are super easy to toss together and you can do a traditional triangle shape or you can make it super easy and do a circle. I also often make a double batch of these and then freeze 80% of them. I take out a few at a time so it helps with portion control so my family doesn’t just get a snack attack and devour them all.

The honey flavor is perfect in these! You could do a cinnamon/sugar mixture to add to the top of these or even a little cocoa powder for a chocolate version. Either way you decide to make these they will be a new favorite!

One tip: make sure to not overbake these. They might look puffy when you take them out and that’s ok! They should be slightly golden and that’s it. As they set they will harden nicely into that famous graham cracker texture.

Ingredients:

Adjust Servings
2 1/2 c einkorn flour (or 2 c all purpose flour)
1stick butter, softened
1c coconut sugar
3tbsp honey
1tsp vanilla
1/2tsp salt
3tbsp milk
1tsp baking soda

Directions

1.
Make Dough
Combine butter and sugar and whisk until slightly fluffy Add vanilla and honey, mix Then add in remaining ingredients and mix well Place dough on waxed parchment and place in fridge to chill at least an hour

Roll out & Bake
Dust working surface well with flour Roll out dough about 1/4 in thick Shape any way you'd like (you can use a circle cutter, cut into rectangles, or any shape! ) Place on lined baking sheet. You can poke holes if you'd like or leave it off Bake at 350 for 8-10 min, lightly golden Do Not Overbake, they will harden as they set See above description for freezing and storage recommendations!
