Easy Asian Rice Paper Rolls

These Easy Asian Rice Paper Rolls are my go to option when I want something flavorful and delicious but not very heavy. I love the crunch of the fresh veggies, flavors of the sauce with the chicken, and the light rice paper wrapper. Best part is this version requires no baking of the rice papers and they easily store in the fridge so you can grab n go when you need to.
Easy Asian Rice Paper Rolls
Servings: 8
Ingredients
- 1 1/2 lb Boneless skinless chicken thighs
- 10 oz Dress it up sesame tahini dressing (or other comparable dressing)
- 1 cup Cooked rice
- 2 Carrot (peeled and sliced long ways, thinly)
- 2 Cucumber (Sliced long ways, thinly)
- 12 Spring roll wrappers (I use Oceans Halo spring roll rice wrappers)
Instructions
Cook Chicken
- Set 1 1/2 lb Boneless skinless chicken thighs in fridge night before if you prepped and froze Dump chicken and 10 oz Dress it up sesame tahini dressing into slow cooker. Cook on low for 5-6 hours. Then shred. Add a bit more sauce if needed.
Roll Wrappers
- Cut 2 Carrot and 2 Cucumber into long, thin sticks. Cook 1 cup Cooked rice according to package directions.
- Grab a large bowl and fill with warm water about half way
- Grab 12 Spring roll wrappers , veggies, chicken, and rice.
- Place 2 wrappers at a time into the warm water for about 1-2 minutes until soft.
- Remove from water, lay flat on counter
- Near one side, fill with 1-2 tablespoons of rice, 1-2 tablespoons of chicken, and 4 strips of veggies (combo of carrots and cucumbers)
- Begin to fold the wrapper over the filling and roll once or twice, tuck in the edges, and continue rolling until sealed.
- Continue process until all are made.
To Eat
- You can eat them without cooking and dip in the extra sesame tahini dressing or soy sauce/cocoaminos.
- You can also warm them in the oven at 350 degrees on a lined baking sheet drizzled with oil for 10-15 minutes until heated through. Serve with favorite sauce.

Dressing
- If you can't find this brand, grab another that is similar in flavors.
Storage
- Store extras in the fridge in an airtight container. If you need to layer them, make sure you have parchment in between prevent sticking
