Easy Homemade Chili

One meal that my entire family will always eat is when I make this Easy Homemade Chili. I’m not sure if its the flavorful base or the corn muffins I made with it but it doesn’t hurt that every person can customize their own bowl just the way they like it. We love having cheese, sour cream, and green onions. But you could also add some hot sauce, crispy onions, or crackers.

Easy Homemade Chili

Ingredients

  • 1/2 Vidalia onion (use half a large or a full smaller one, peeled and chopped)
  • 1 tbsp Garlic (peeled and chopped)
  • 1 lb 85 percent lean ground beef
  • 3 tsp Happy salt (any basic seasoning blend or just salt and pepper mixed)
  • 2 tbsp Chili powder
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/8 tsp Ground cayenne pepper (use 1/8-1/4 tsp, or omit if you don't like it)
  • 28 oz Crushed tomatoes
  • 6 oz Tomato paste
  • 16 oz Chicken broth  (can use beef or veggie broth too)
  • 1 cup Water  (or add an extra cup of broth)
  • 3 tbsp Honey
  • 15 oz Kidney beans (drained and rinsed)
  • 15 oz Black beans  (drained and rinsed)
  • cup Elbow macaroni  (can use regular or gf)
  • 1 tbsp oil

Instructions

  • In a large soup pot over medium-high heat, add 1/2 Vidalia onion, chopped and 1 tbsp Garlic with 1 tbsp oil . Cook a few minutes, stirring often 
  • Then add in 1 lb 85 percent lean ground beef. Chop and mix around until cooked through. 
  • Then add in 3 tsp Happy salt or other all purpose salt, 2 tbsp Chili powder, 1 tsp Onion powder and 1 tsp Garlic powder, and 1/8 tsp Ground cayenne pepper. Stir well. 
  • Then add in 28 oz Crushed tomatoes, 6 oz Tomato paste, 16 oz Chicken broth , 1 cup Water . Bring to a boil. 
  • Then add in 1  cup Elbow macaroni  and cook through until done, according to package. 
  • Once pasta is cooked, add in 15 oz Kidney beans and 15 oz Black beans  and 3 tbsp Honey
  • Mix well, turn off heat. 
  • Add an extra teaspoon of everything seasoning if desired, we like it but you might not! 
  • Serve in a bowl with your favorite chili toppings. We love making sweet corn muffins to go with this.

Storage
  • Store leftovers in freezer for up to 2 months or you can keep in the fridge for up to 4-5 days in an airtight container.
