Easy Homemade Queso

If you remember the classic 90’s cheese dip that was always at game day parties, you will love this Easy Homemade Queso. Made with clean, simple ingredients instead of a block of artificial cheese, this will take you back! Serve with your favorite chips, dip in tacos or taquitos, or drizzle over a huge pile of nachos. Easy Homemade Queso

Ingredients

  • 1/3 cup Einkorn flour  (Use 1/4 cup all purpose flour or gluten free flour)
  • 1/4 stick Butter
  • 2 cup Milk
  • 8 oz Extra sharp cheddar cheese  (grated, prefer to grate my own)
  • 8 oz Pepperjack cheese  (grated, prefer to grate my own)
  • 1 tsp Salt and pepper  (to taste)
  • 1/4 cup Salsa  (any salsa you like)
  • 4 oz Diced green chiles

Instructions

  • In skillet, add 1/4 stick Butter and melt over medium-low heat 
  • Then add in 1/3 cup Einkorn flour  and whisk for 30 seconds
  • Add 2 cup Milk and whisk until it begins to thicken 
  • Add 8 oz Extra sharp cheddar cheese , 8 oz Pepperjack cheese , 4 oz Diced green chiles, and 1/4 cup Salsa . Whisk well
  • Season with 1 tsp Salt and pepper  to taste 
  • Enjoy!

Notes

Storage
  • Keeps well covered in the fridge for up to 5 days or you can freeze in a freezer safe container. Thaw in fridge overnight then reheat in a pan over low heat.

  • Use gluten free flour for allergens
