Easy Sweet Potato Hash Recipe

I love a good hash, but this sweet potato hash is next level good!

We go to a local restaurant that is farm to table and one of my favorite things to order is their pork chop with a bacon and potato hash.  I wanted a way to get a similar flavor, minus the bacon to clean things up a bit for the holidays.  Don’t get me wrong, I love my bacon but I was looking for a lighter side.  The other issue was I needed a vegan side for some of our family that is meat free and this nailed it.  It had the same flavor and the sweetness of the sweet potatoes against the zing of the balsamic glaze made me not even miss the bacon fat.  This truly is the best easy sweet potato hash recipe and in a few easy steps it can be created in your kitchen!

The holidays are here and it can be hard to find a healthy side.  Let this be your vegan version to complete your delicious meal.  My kids are not fans of sweet potatoes, but this dish they will gobble right up!

Ingredients:

  • 2 TBSP. olive oil
  • 6 sweet potatoes cubed
  • 1 yellow onion sliced
  • 1 tsp. salt
  • 1 tsp. fresh thyme
  • 3 garlic cloves chopped
  • 2 TBSP. balsamic glaze
  • 1 TBSP. honey

    Easy Sweet Potato Hash

    This sweet potato hash is so easy to make and perfect for a vegetarian side dish, or add an egg to make an entire breakfast.

    Ingredients

    • 2 TBSP. olive oil
    • 6 sweet potatoes cubed
    • 1 yellow onion sliced
    • 1 tsp. salt
    • 1 tsp. fresh thyme
    • 3 garlic cloves chopped
    • 2 TBSP. balsamic glaze
    • 1 TBSP. honey

    Instructions

    • Chop the sweet potatoes into small cubes and place them into a bowl with the olive oil and salt.
    • Heat the oven to 375 degrees and pour the potatoes onto a parchment lined large baking sheet. Bake in the oven for 45 minutes.  They should be slightly tender.
    • Heat a large skillet over  medium heat and add the yellow onion. Let the onions caramelize.
    • Finally,  pour in the balsamic glaze and honey to the hot skillet. The total time it takes is about 15-20 minutes.
    • Once the glaze has thickened remove it from the heat and let the hash cool. Serve immediately.

Making this Easy Sweet Potato Hash

The first step is to bake the sweet potatoes. Chop the sweet potatoes into small cubes and place them into a bowl with the olive oil and salt.  Heat the oven to 375 degrees and pour the potatoes onto a parchment lined large baking sheet. Bake in the oven for 45 minutes.  They should be slightly tender.

Heat a large skillet (we love using a cast iron skillet) over – medium heat and add the yellow onion- if you don’t have yellow onions you can always use red onion and the sweet potatoes. Let the onions caramelize. Finally,  pour in the balsamic glaze and honey to the hot skillet. The total time it takes is about 15-20 minutes.  Once the glaze has thickened remove it from the heat and let the hash cool. Serve immediately.

This hash is perfect for a holiday side, but also great for a sweet potato breakfast hash.  There are a lot of ways you can change the hash, simply by tossing in some green peppers and a little bit of black pepper to spice it up a bit.  Serve the dish with a fried egg and other root vegetables to make this dish a complete meal.
