Easy Sweet Potato Hash
Servings: 6
Ingredients
- 2 tbsp Olive oil
- 6 Sweet potatoes (cubed)
- 1 Onion (yellow, sliced)
- 1 tsp Salt
- 1 tsp Thyme (fresh)
- 3 Garlic cloves (chopped)
- 2 tbsp Balsamic glaze
- 1 tbsp Honey
Instructions
- Chop the sweet potatoes into small cubes and place them into a bowl with the olive oil and salt.
- Heat the oven to 375 degrees and pour the potatoes onto a parchment lined large baking sheet. Bake in the oven for 45 minutes. They should be slightly tender.
- Heat a large skillet over medium heat and add the yellow onion. Let the onions caramelize.
- Finally, pour in the balsamic glaze and honey to the hot skillet. The total time it takes is about 15-20 minutes.
- Once the glaze has thickened remove it from the heat and let the hash cool. Serve immediately.

Reheat
- Thaw in refrigerator night before, add to a oiled skillet over medium heat to heat through.
