Einkorn Flour Bubble Pizza

Believe it or not, no one would have ever guessed when I was younger that my work would in any way be related to food! But here I am! And today I’m sharing with you one of my first recipes I ever made in 8th grade home economics class, a bubble pizza. But mine is a healthier homemade version so it’s an einkorn flour bubble pizza! And I have to say, I don’t think my kids have ever had this much fun eating pizza for dinner. Its such a fun recipe to make and the kids can easily join in! Customize with your favorite toppings and you have the perfect way to end a Friday night.

In the earliest days of cooking I would never dream of making my own pizza dough. So instead we used canned biscuits for this. But since we try and make healthier twists on our classic favorites, I made a homemade pizza dough recipe that is fool proof and so flavorful! It doesn’t require hours and hours of rising or even a second rise. I use all purpose einkorn flour for our pizza dough but you can use regular all purpose flour as well.

This recipe is such a fun way to switch up the classic style of pizza and my kids love eating this! The little dough balls get puffy and soft, the sauce coats them lightly, and all the toppings on the top add the perfect crunch with the melty cheese! For the best results, add cheese then toppings on your bubble pizza so they can get nice and toasted!

Ingredients

2 1/2 tsp active dry yeast

2 tbsp honey

​4 tbsp olive oil

3 1/2-3 3/4 c einkorn flour ( 21/4-2 1/2 c all purpose flour)

1 tbsp salt

2-3 c favorite cheese

1 jar favorite pizza sauce

Favorite pizza toppings

Instructions

To start, we will make the easy pizza dough! In a large bowl you’ll add warm water, active dry yeast, honey or maple syrup, and a drizzle of olive oil. Mix them all together then cover the bowl with a tea towel. You are going to want to let the yeast get foamy and active before you add the flour and salt. This might take about 10 minutes or so. I love this pizza recipe, its a base for so many other recipes on our site and truly is so versatile! After the active dry yeast is foamy, add in the flour and sea salt. At this point you can use your hands or place in a bowl of a stand mixer with a dough hook and knead for a minutes until a ball of dough forms and its not sticking to the sides of the bowl.

If you need to add a sprinkle of flour you can. If it’s still sticky, you can add a bit more oil and that should help it all come together well. Once dough is ready, you’ll want to cover the large bowl with a tea towel or lid and let the dough rest for about 30-45 minutes until it’s doubled in size and puffy. I like to try and find a warm spot to place the bowl, maybe in the sun, to aid the rising process. You can also place in your oven with the oven lights on if the sun is hard to come by.

Once dough is ready, use a floured work surface and turn out the dough. This is where the pizza recipe gets a bit different…grab another large bowl and add in your pizza sauce. You will want to add dough balls, equal in size but doesn’t have to be exact, add place in sauce. You can use a digital scale to help get the sizing or just eyeball it, your choice!

Once the dough balls are coated in sauce, place on a parchment paper or silicone mat lined baking sheet, pizza pan, or you can use a pizza stone if you have one. Lay the balls of dough out so that they are touching but there can be a tiny gap because they will expand.

Toppings

I have very specific preferences when it comes to cheeses and toppings of my pizza. So I will share with you what I use but feel free to use whatever your family loves. For cheese, I use a blend of fresh mozzarella, asiago, and parmesan cheese. I freshly grate the asiago and parmesan and add the fresh mozzarella on top. Then I add our favorite toppings. My kids prefer just cheese. So I usually make two of these and leave one plain. The other one I love pepperoni and banana peppers! You can add any toppings you like though. Italian sausage, red onion, peppers, etc.

Cooking

I cook my pizza in a very hot oven, 425 degrees Fahrenheit. This works well and gets a nice crispy crust on the dough. If you have one of the pizza ovens you can bake your bubble pizza in there but leave it on the pizza stone or pizza pan. Cast iron also works well if the pan is large enough. I bake my for about 15-18 minutes, I like my toppings crispy! Adjust according to how you like yours cooked, just keep a close eye after 10-12 minutes. Follow your pizza oven’s instructions if using that as they are all unique.

This is one of the best pizza recipes that my whole family loves! The kids love to help dip the little dough balls in the sauce and place on the pan. And it’s just so much fun to each pizza in a bubble form! The tender chewy crust is so perfect with the melty cheese and crispy toppings. It’s just a perfect way to end a long week!

​Meal Prep Tips

There is a bonus for this great pizza! You can prep the dough the day before or even weeks before! If you want to prep a day before, after you add in the einkorn wheat and sea salt place in the fridge until you are ready for it the next day. If you want to prep way in advance or make extras for another time, its similar but once you add the flour and sea salt instead of adding to the fridge place in an airtight container or plastic sealed bag and place einkorn pizza dough in the freezer! It will hold well for a few months! Just place in the fridge night before and leave on the counter for an hour or two before use. Super easy time saver!

Substitutions

You an swap instant yeast for active dry yeast, just might not need as long to rise and the active dry yeast. Maybe just a minute or so. You can also use regular all purpose flour for einkorn flour. The conversion rate is in the recipe! Super easy. If you want to leave off meat, add some fresh basil or other herbs on top instead. Fresh veggies are always a great addition as well. I am not a fan of cheese substitutes but feel free to play around with goat cheese or any other option you might like! A lactose free cheese could also work if needed and would taste very similar.

Einkorn Flour Bubble Pizza

Ingredients

  • 3 1/2 cups Einkorn Flour Can use all purpose (2 1/4-2 1/2 cups)
  • 1 tbsp sea salt
  • 4 tbsp olive oil
  • 2 tbsp honey
  • 2 1/2 tsp active dry yeast
  • 1 cup warm water make sure it's not hot!

Instructions

  • In a large bowl, add water, honey, olive oil, and yeast. Mix well, cover, and allow to get foamy for 10 minutes. This lets you know the yeast is active
  • Once ready, add in flour and salt. Start with smallest amount of flour and add as needed. Mix well and knead by hand or with a hook attachment on stand mixer until dough is smooth. Rest for 30-45 minutes
  • Once ready, flour work surface. Grab large bowl and add in pizza sauce. Then grab 1-2 tbsp of dough and roll into a ball. Place pizza dough in sauce and coat well until all the dough is in the sauce. Place on lined baking sheet.
  • Preheat oven to 425, then top with cheese and favorite toppings. Bake for 15-18 minutes until golden brown. Enjoy!
