Einkorn Flour Herbed Chicken and Dumpling Soup

Nothing warms you up on a cold day like a hearty dumpling soup recipe. The flavorful chicken broth, seasonings, tender shredded chicken, and dumpling dough are the perfect combination to bring warm all the way down to your toes! I didn’t think it could get much better than the classic until I added from fresh herbs to my dumpling recipe, and came up with herbed chicken and dumpling soup. Its so incredibly flavorful and really lifts this dish more than just the classic fluffy dumplings.

I have always loved dumpling batter in my soup but felt it was missing something. Adding in fresh herbs, or dried will work too, really add so much to the dish. One other swap I made in my dumpling dough was using Einkorn Flour instead of regular all purpose flour. It has so many added benefits, especially for those who are gluten sensitive. You can read more about Einkorn Flour here and how to use it in your favorite recipes! But if you don’t want to use Einkorn Flour, all purpose flour will work too! Just follow the conversion ratios in the recipe.

I opted to use chicken thighs for this soup as I love the flavor of dark meat. You could use skinless chicken breast or shredded chicken from a rotisserie. Whatever is easiest for you or use what you have on hand. Any option will work. I have not tried using a whole chicken in this recipe but if you feel confident, go for it!

An amazing part about this soup is how it tastes like a creamy chicken soup but there is no milk in the recipe. The homemade dumplings add to this consistency and create that classic chicken and dumplings flavor. The soup base starts with the classics; onion, garlic, celery, and diced carrot. I toss these around in 1 tablespoon of the melted butter or olive oil and the way they roast in the pan and caramelize after a few minutes is the perfect way to start this soup. You can use store bought chicken broth, homemade chicken broth, or chicken bouillon and water.

My favorite herbs to use in this soup are dried oregano, dried or fresh thyme, dried or fresh sweet basil, and some paprika. I love cooking my soup in a 5-7 quart dutch oven or you can use a large soup pot. Some people make their chicken soup recipe in a slow cooker, but I have never tried this recipe that way. Maybe that will be a project for winter…

Ingredients

  • 2 lbs chicken thighs
  • 2 medium diced carrots
  • 2 stalks of celery, diced
  • 1 large onion, diced
  • 1 tablespoon of chopped garlic
  • 48oz of chicken broth of chicken stock
  • 1 teaspoon dried thyme or fresh
  • 1 teaspoon dried oregano
  • 2 teaspoon dried basil
  • 1/2 tsp paprika
  • 2 tsp salt
  • 1 tsp pepper
  • 1 lemon, juiced

​Dumpling Ingredients

  • 1 1/2 c einkorn flour
  • 1 tsp baking powder
  • 1 c water
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp minced dried onion
  • 1 tsp garlic powder
  • pinch of salt

Easy Chicken  & Herbed Dumping Directions

First things first, we get the veggies all sauteed and delicious. Heat some olive oil or butter in a large pot add in the diced carrots, celery, onion, and garlic. Mix around for 4-5 minutes until the veggies get some golden brown color. This brings out the flavors and starts the base of the soup. At this point, add in the seasonings, fresh or dried. You will need more if using fresh herbs. Mix around a few minutes then add in the chicken thighs and the chicken broth or whatever broth you are using. Bring to a boil, lower heat to medium-low, cover with a lid, and allow the chicken to cook in the liquid for about 15-20 minutes.

While the chicken is cooking in the broth, this is the perfect time to mix up the homemade herb dumplings. Grab a mixing bowl and add the flour, baking powder, dried herbs, and salt. Toss to mix and then add the water. Mix around until well incorporated. And that’s it. That is truly how simple the herbed drop dumplings are!

Once the chicken is done cooking, remove and allow it to cool for a few minutes. Shred chicken with a fork and add back in to the soup. Then you can begin adding the airy dumplings! You can roll them into balls and drop them in or I like to use kitchen scissors and cut off little pieces. It feel more like a vintage recipe this way and not so perfectly put together. You do you! Once dumplings are added, cover with the lid for an additional few minutes over medium heat. The dumplings will cook and get soft and puffy. I love to add a fresh squeeze of lemon juice to finish off my soup!  Now the soup is ready to serve!

Additional Add-ons

To make this the ultimate comfort food, I love to top mine with some sort of melty cheese. My favorites are asiago, parmesan, or fresh mozzarella. You can use any other kind of cheese you might like. I also love to serve this soup with my favorite homemade garlic knots!         

This is truly a favorite recipe when the weather starts to change and I am craving some warm, hearty soups. I love the herbed-flecked dumpling and how it really lifts this classic dish into something that feels all the more special.
