Einkorn Flour Pizza Pinwheels

During school or during summer, lunch time can definitely slow down the rhythm of the day. Everyone wants something different, everyone is hungry, and crabby. So I went to the kitchen to figure out how to make this part of the day run smoother. Happy to say this is a huge success!

During the school year, I just warm these already pre made pinwheels in the oven and wrap in parchment, then foil, then place in their lunch boxes. During the summer, you just pop in the oven and place on their plates. Its so easy and no one ever complains about these!

I have done other versions of these, like ham and gruyere, turkey and cheddar, and even a shredded BBQ chicken and cheese. All so delicious and a fun way to switch up a staple. The pizza dough is super quick and comes together in 30 min!

I bake a double batch of these often, bake them all the way to the end, and then freeze them in a ziploc bag. They are super quick to reheat in the oven, just about 10 minutes at 350. I cut up some cucumbers, add some fruit, and you have a well rounded meal!

I have found when you take that extra time to prepare for the moments during the day are the busiest, like during the school year its mornings. In the summer, stopping for a chunk of time in the middle of the day can really throw off your rhythm. Setting myself up during these times with easy, healthy options it can make all the difference.

Ingredients:

Adjust Servings
2 1/2-3 c einkorn flour (or 2-2 1/2 c all purpose flour)
2 1/2tsp active yeast (love bobs red mill)
2 tbsp honey
2 tbsp cold pressed EVOO
1tsp salt
1c warm water
2-3c cheese and toppings of choice

Directions

For the Dough
In a bowl, combine water, yeast, honey, and oil. Let stand for 5 min until bubbly Add in flour and salt. Start with lowest amount of flour and add knead until a ball is formed. Soft but not too sticky. Let stand in bowl 20-25 min until puffy. Once puffy you can roll out into a rectangle (measure this with parchment so you can roll later, want them to be the same size) Roll out dough and transfer onto parchment paper

Make Pinwheels
Once rolled out on parchment, add pizza sauce, cheese, and toppings of choice. Rolling hot dog style, begin from the bottom and tightly roll forward. Once rolled, crimp the edges, wrap in parchment, and store in the fridge for at least an hour to chill. Preheat oven to 425, bring out the dough log Slice into 1 inch slices, place on lined baking sheet Bake for 10-12 min, until golden brown. Store any left in a ziploc bag in the freezer! Enjoy!
