Fajita Bake

Ingredients

  • 2 lb Chicken (breasts or thighs work here)
  • 2 oz Fajita seasoning (our favorite brand is Siete)
  • 1 1/2 cup Rice (rinsed and drained)
  • 3 cup Chicken broth
  • 1 Onion (peeled and sliced)
  • 1 Green pepper (sliced)
  • 1 tsp Garlic powder
  • 1 tsp Salt and pepper (each)
  • 2 cup Monterey jack cheese (shredded)

Extras for Toppings

  • 1 cup Sour cream
  • 1 cup Salsa

Instructions

  • If you didn't pre cook chicken, add to crock pot with seasoning and a bit of water at the bottom and cook on low all day
  • Slice peppers and onions if you didn't already prep them
  • Shred cheese
  • Preheat oven to 350 degrees. In a 9x13 inch pan, add rice, chicken broth, salt, pepper, garlic powder, chicken, peppers, and onions. Mix around gently. Then top with cheese.
  • Bake at 350 for 30-35 minutes until rice is set.
  • Top with favorite toppings, enjoy!
