Fajita Bake
Servings: 8
Ingredients
- 2 lb Chicken (breasts or thighs work here)
- 2 oz Fajita seasoning (our favorite brand is Siete)
- 1 1/2 cup Rice (rinsed and drained)
- 3 cup Chicken broth
- 1 Onion (peeled and sliced)
- 1 Green pepper (sliced)
- 1 tsp Garlic powder
- 1 tsp Salt and pepper (each)
- 2 cup Monterey jack cheese (shredded)
Extras for Toppings
- 1 cup Sour cream
- 1 cup Salsa
Instructions
- If you didn't pre cook chicken, add to crock pot with seasoning and a bit of water at the bottom and cook on low all day
- Slice peppers and onions if you didn't already prep them
- Shred cheese
- Preheat oven to 350 degrees. In a 9x13 inch pan, add rice, chicken broth, salt, pepper, garlic powder, chicken, peppers, and onions. Mix around gently. Then top with cheese.
- Bake at 350 for 30-35 minutes until rice is set.
- Top with favorite toppings, enjoy!
