Falafel Burger
We love a recipe that is light enough you can use it for lunch or dinner. If you are like us, lunch can sometimes be a struggle. You don’t want a huge meal that will zap your energy in the afternoon, but you want enough to sustain you so you don’t graze on that candy bowl in the afternoon. This is where the falafel burger is perfect.

2 15 oz. canned garbanzo beans | |
2TSBP. Chopped Cilantro | |
3 cloves pressed garlic | |
1tsp. Garlic Powder | |
1tsp. Dried Dill | |
1/2tsp. Dried Coriander | |
1/2 tsp. Cumin | |
1/2cup Hemp Hearts | |
1/3 cup all purpose Einkorn flour | |
2TBSP. psyllium husk | |

Blend all ingredients in a food processor until blended together and form 8 burger patties. Or, even better use the shape + press to make things faster.
To cook either grill on a heated cast iron skillet over medium heat or in the oven at 425 for 10 min. / side.
A great tip for the oven- place the pan in to get hot first. Then cover with parchment and drizzle some olive oil on. This will get you that nice sear. The burger will "puff up" and become crispy on the outside when done.

Notes
If you don' t have psyllium husk you can double the flour. If you don't have einkorn flour use all purpose flour and just a TBSP less.
