Feta and Green Onion Muffins

Ingredients
Dry Ingredients
- 2 cup Einkorn flour
- 1 tsp M salt
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tbsp Baking powder
- 1/4 tsp Baking soda
Wet Ingredients
- 1/2 cup Whole milk
- 1/4 cup Greek yogurt
- 2 Egg
- 1/2 cup Melted butter
- 1/2 cup Crumbled feta
- 1/4 cup Spring onions (finely chopped)
Instructions
- Preheat the oven to 375.
- In a bowl combine 2 cup Einkorn flour, 1 tsp M salt, 1 tsp Garlic powder, 1 tsp Onion powder, 1/2 tbsp Baking powder, and 1/4 tsp Baking soda.
- Line muffin tins with muffin wrappers.
- In a separate bow combine 1/2 cup Whole milk, 1/4 cup Greek yogurt, 2 Egg, 1/2 cup Melted butter, 1/2 cup Crumbled feta and 1/4 cup Spring onions .
- Mix the dry ingredients into the wet ingredients and mix well.
- Scoop evenly into 10 muffin tins.
- Bake 18-22 minutes until a toothpick comes out clean.
- Let cool and enjoy!
Notes
- To freeze, let muffins come to room temperature. Place in the freezer while still in the tin for 2 hours. Remove and place into a freezer safe bag or storage container. Store in the freezer for up to 2 years.
- Bake at 350 for 10 minutes or add to microwave for 30-45 seconds
