French Silk Pie with Chocolate Einkorn Crust

This pie is hands down my husbands favorite pie and the most requested by him anytime I’m going to make a pie! Its rich, decadent, and just a treat!

For Pi day this year he requested that I make him one and I used it as an opportunity to try out a new crust I have been wanting to play around with. I used Einkorn flour here and added in some dutch cocoa to the mix, it was heavenly!

We use Einkorn flour a lot as we have gluten sensitivity in our home and we all do really well with this flour. It also is a great sub for regular all purpose and can almost be subbed as a 1:1 with a slight decrease in the liquids. But you can use ap flour here! Just decrease by 1/2 c!

Ingredients:

Adjust Servings
2.5 c Einkorn Flour
1/2tsp salt
1/2c coconut sugar
1/3c dutch processed cocoa powder
1.5sticks (3/4 c) butter
1c ice cold water
4 eggs, beaten
1.5c coconut sugar
2tsp vanilla
1bag dark chocolate chips
1.5sticks butter (3/4 C) room temp
1.5 c whipping cream
4tbsp maple syrup
1c heavy whipping cream
1/3c maple syrup

Directions

1.
For Crust
In food processor, add dry ingredients and blend well Cut butter into chunks, add slowly til coarse crumb forms Then, turn on food processor and add in 1 tbsp ice cold water at a time until dough forms into a ball, do not over add water or it will be too sticky. (You will not use all the water!) Press half mixture into a pie pan, other half wrap and store in fridge or freezer Poke holes in crust and bake at 350 for 15-20 min, until set. Cool completely.

For Filling
In sauce pan, add eggs and sugar, whisk on med heat until combined Turn off heat, add chocolate chips and vanilla. Cool mixture completely (can use fridge here to speed up cooling) While cooling, whip 1.5 C heavy cream with 4 tbsp maple syrup until stiff peaks form Then add cooled chocolate mixture to cream. Fold in gently until well incorporated Add to pie crust and place in fridge.

For whipped topping
Beat together another 1 c heavy cream and 1/4 c maple syrup until stiff peaks form. Add to the top of pie and top with chocolate shavings for chocolate chips! Store in fridge Enjoy!
