Fresh, Homemade Tomatillo Salsa

What is the best green salsa recipe you ask?! Well, in my opinion, its this one!

I recently moved to MI from IL, but while I lived in IL I used to sell baked and homemade goods from my house. Its was such a fun job! My two biggest sellers were homemade cinnamon rolls with a coffee/maple icing and this green salsa! I even once had a women buy 10 jars at once! Crazy!

This salsa is super bright, fresh, and such a great way to celebrate all the fresh, summer vegetables! I also love it because you can easily customize the spice level by either adding, subtracting, or even roasting the jalapeños!

You can use this recipe as a marinade for meat, toppings for tacos, or just to dip your favorite tortilla chips in! The sky is the limit here! This salsa is not canned so it does need to be refrigerated and lasts about 2-3 weeks, if you don’t eat it at first, that is.

I like to store mine in the fridge in a mason jar to ensure it has a tight seal and will last the longest. Most of this salsa is uncooked veggies except the tomatillos, they do need to be roasted at 350 for 20 min. I add in a bunch of cilantro at the end to brighten it up and then my favorite added ingredient is diced green chilis! It gives this salsa some nice depth and really rounds out the entire flavor profile.

Ingredients:

3 lbs fresh tomatillos
6 jalepenos (raw, seeds discarded, chopped)
2cans diced green chilis
2medium onions
2bunches cilantro
3 limes, juiced
6 garlic cloves, peeled
1-2tbsp salt

Directions

Roast Tomatillo
Peel and rinse the tomatillos Preheat oven to 350 and place on a roasting pan Drizzle with oil and sprinkle with salt Roast for 20 min, stirring up half way through Allow to cool for 10 min *If you want it less spicey you can also chop and deseed the jalapeños and roast with the tomatillos.

To make salsa
In a food processor, add the tomatillos, onion, garlic, lime juice, cilantro, jalepenos, salt, and green chilis. Blend for a few minutes until well mixed Taste to see if you need more salt Store in mason jars in the fridge or you can serve right away!
