Garlic and Honey Carrots

Find it difficult to get your kids to eat their veggies?! These honey and garlic roasted carrots are a great way to entice them to get some goodness in! Drizzle with the sweet honey and the light seasoning, these tend to go over well with kids and adults alike! They go well with almost any main dish! I love making a big batch of these ahead of time and freezing for the week ahead. I can quickly reheat in the oven and Voila! A healthy dinner complete with sides everyone will love is ready in a flash.
Honey & Garlic Roasted Carrots
An easy side dish the whole family will love
Servings: 6
Ingredients
- 1/4 c honey
- 1/3 c avocado oil
- 1 tsp all purpose seasoning salt like happy salt
- 1 tbsp fresh garlic peeled and diced
- 1 tbsp fresh thyme chopped
- 8 large carrots sliced into thirds
Instructions
- Preheat oven to 375 and grab a sheet pan with edges
- Place carrots on a sheet pan
- In a small bowl, mix together honey, avocado oil, all purpose salt, chopped garlic, and fresh thyme
- Mix well until combined
- Dump over carrots and massage into well
- Then roast in the oven at 375 for 35-40 minutes until carrots are golden and cooked through
- Remove from oven, cool, and enjoy. Goes well with pot roast, chicken, steak, or pasta dish.
