Gluten Free Sausage and Tortellini Soup

As the seasons shift and the days turn cooler I begin to crave all the warm and hearty soups! We often do chili, chicken noodle, and tomato soups as they are super quick and easy to toss together. But one of our family favorites that is requested often is this gluten-free tortellini soup recipe! Its warm, full of flavor, and so easy to make on a busy weeknight.

The reason this recipe can be more difficult is trying to find a gluten free tortellini or ravioli. But recently I found an amazing, clean brand that I love at our health food store and they work perfect for this recipe! I love using fresh tortellini when I can but frozen will work. The kind of tortellini I used for this recipe was a spinach and cheese but you could use a meat version or just a cheesy tortellini. Whatever your family loves!

This recipe makes a large pot to feed the whole family. You could always double or triple if feeding a large crowd. I love using a spicey sausage in this recipe but you could also use an italian sausage or any other kind your family likes. I do not add heavy whipping cream into my soup but if you would like a creamy tortellini soup feel free to add in a splash or two of heavy whipping cream at the end of cooking. If you want a creamy soup without dairy, you could add full fat coconut milk from the can to add a nice rich flavor.

This is a perfect recipe for soup season and for those really busy weeknights as it comes together in about 30 minutes from start to finish. You can prep in advance and store in the freezer in an airtight container for a few months to save time. I love serving this easy meal with this homemade pita recipe made with einkorn flour but you could use any crusty bread your family likes! You can also play around with the seasonings and add what you like. I listed below what I use but other ideas are italian seasoning, garlic powder, or any other herbs that sound good to you. You could also add in other veggies like bell pepper or kale!

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 heaping tablespoon chopped garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 lb ground spicy sausage or italian sausage
  • 8 c chicken broth or vegetable broth will work, too
  • 1 package of frozen or refrigerated cheese tortellini ( I used gf ravioli because that’s all i could find gf and it worked great)
  • Few handfuls of spinach
  • 1 tsp sweet basil, dried
  • 1/2 tsp dried oregano
  • Few sprinkles of crushed red pepper flakes (opt)
  • Heavy Cream or coconut milk (optional)
  • Cheese to top it

Directions

Make Soup Base

Start making the sausage tortellini soup with a large dutch oven or another large soup pot. Place pot over medium heat and add in olive oil. Allow to heat up for a few minutes then add in chopped garlic and onion. Allow to cook for a few minutes until it becomes translucent. Add in the salt, pepper, dried basil, dried oregano, and ground sausage. Mix around and cook sausage through. This part should take about 5-6 minutes. Once sausage is cooked, add in chicken stock or vegetable broth, mix around, and add in pasta.

Finishing Touches

Once you add in the cheese-filled tortellini or ravioli, bring the chicken broth back up to a boil. After it is boiling, turn off the heat and add the lid onto the large soup pot or dutch oven. Allow the pasta to set in the soup for 5-6 minutes without heat. To finish up, add in a few handfuls of spinach and mix around. Add in a few red pepper flakes if desired and/or a splash or two of coconut milk.
