Gluten Free Sausage & Tortellini Soup

This gluten-free sausage and tortellini soup is a delicious and hearty meal. It is perfect for a cold winter day and one of my families favorites every time I make it. This soup is also easy to make. You only need a few ingredients and I used spicy sausage but use any kind you like. You can also use different types of gluten-free pasta. This soup is a great way to use up leftover vegetables. You can also add other ingredients to your soup, such as beans, spinach, or mushrooms. This soup is a great way to get a warm and satisfying meal on the table quickly.
Gluten Free Sausage & Tortellini Soup
Servings: 6
Ingredients
- 2 tbsp Olive oil
- 1 Onion (chopped)
- 1 tbsp Garlic (chopped)
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 lb Ground spicy sausage (italian)
- 8 Vegetable broth will work (too)
- 10 oz Cheese tortellini (refrigerated, frozen, (I used gf ravioli because that's all i could find gf and it worked great)
- 2 cup Spinach
- 1 tsp Basil (dried, sweet)
- 1/2 tsp Oregano (dried)
- 1 tsp pepper flakes (red, crushed)
- 1/4 cup Cream (full fat coconut milk works well here, too)
- 1 cup parmesan cheese grated
Instructions
- Make Soup Base
- In a large soup pot, add 2 tbsp Olive oil and heat over medium heat. Then add 1 Onion chopped and 1 tbsp Garlic peeled and chopped. Stir for a few minutes until golden brown
- Then add in 1 lb Ground spicy sausage or regular sausage. Cook through.
- Then add in the 1 tsp Basil, 1/2 tsp Oregano, 1 tsp Salt, and 1/2 tsp Pepper. Stir for a few minutes. Then add in 8 Vegetable broth will work and bring to a boil.
- Once water is boiling, add in 10 oz Cheese tortellini and cook according to package directions.
- Once pasta is cooked, turn off heat, add in 2 cup Spinach and 1/4 cup Cream. Stir and add lid for 1 minute to wilt the leaves.
- Add in 1 tsp pepper flakes if desired, can leave out or decrease if you don't like heat. Serve soup into bowls and divide out 1 cup parmesan cheese grated to serve onto the bowls of soup. Enjoy!
Notes
Ravioli
- Use any kind of ravioli you prefer! I have used homemade and gluten free but regular works great, too.
