Gluten Free Sugar Cookies

A good sugar cookie recipe can be the base for many delicious desserts! Or even just enjoyed on their own!

I love this recipe because it leaves out the gluten and keeps all the goodness!

I use coconut sugar in this recipe and its a milder sweetness, which we prefer! But if you like that extra sugary feeling in your cookie, you can also use half coconut and half cane sugar or just all cane sugar! Totally up to you!

These will soon become a classic, staple in your cookie rotation!

Ingredients:

Adjust Servings
1 1/2 c almond flour
1 1/2 c oat flour
1/2 tsp salt
1 tsp baking soda
1 c sugar
2 eggs
1/2 c butter, melted
1 tsp vanilla extract or bean paste

Directions

Make the Dough
Combine all dry ingredients in a bowl. In separate bowl mix wet ingredients and slowly add until just mixed. (Make sure all flour is incorporated.) Refrigerate a few hours or overnight Roll our using oat flour on counter so it doesn't stick. Cut out into shapes or roll into balls.

To Bake
Preheat oven to 350 Bake for 11-12 min. Allow to cool before icing or decorating if desired (but you don't need to, they are delicious on their own!)
