Good Humor Strawberry Shortcake Bar Dupe

Equipment

  • 1 mixer with a whisk
  • 1 bowl
  • metal making sheet
  • wax paper

Ingredients

Whip

  • 2 cup Organic heavy whipping cream

Cream Together

  • 8 oz Cream cheese
  • 1/3 cup Organic sugar
  • 1/2 cup Organic fresh strawberries (finely chopped)
  • 1 tsp Vanilla
  • 1 tsp Arrowroot
  • 1/2 cup Freeze dried strawberries

Coating

  • 18 oz White chocolate chips (melted)
  • 10 Golden oreos (use rip van leo for healthier brand or buy gf if needed)
  • 1/2 cup Freeze dried strawberries

Instructions

  • Place a metal mixing bowl in the freezer for 10 minutes. 
  • While that is getting cold line a metal sheet pan with wax paper. 
  • In the metal bowl you just chilled pour in the 2 cup Organic heavy whipping cream and whisk on medium high about 5 minutes until stiff peaks form.  
  • Spoon the whipped topping into another bowl and place in the refrigerator. 
  • In a food processor blend the first 1/2 cup Organic fresh strawberries.
  • In the same bowl cream the 8 oz Cream cheese until fluffy. 
  • Add in the 1/3 cup Organic sugar, 1/2 cup Freeze dried strawberries, 1 tsp Vanilla, and 1 tsp Arrowroot
  • Whisk together until well blended. 
  • Remove the whipped cream from the refrigerator and fold into the cream cheese mixture until well blended (but not too much) you don't want to loose the fluffiness of the cream cheese. 
  • Place into a gallon size zip loc and cut a large tip on the end.  Pipe into squares onto the wax paper. 
  • Poke a popsicle stick into the side half way.
  • Freeze for an hour and a half. 
  • Just before removing from freezer in a food processor blend together 10 Golden oreos and other1/2 cup Freeze dried strawberries

Coating

  • Melt the 18 oz White chocolate chips according to the instructions.
  • Pour a layer of the melted chocolate onto the wax paper. Pour the crumbed coating on another sheet of wax paper.
  • Dip the bar into the chocolate and flip around until coated-work fast. 
  • Immediately dip into the crumb topping and coat all sides. Place back onto the parchment sheet you removed it from. 
  • Pour another layer of chocolate and repeat the process until all of the bars are coated. 
  • Freeze for 30 minutes. 

Notes

FREEZE
  • Place in a gallon size freezer safe ziploc and freeze up to a month.

  • can be made gluten free if you buy gf golden oreos and its naturally nut free
