Green Eggs and Ham

This playful take on green eggs and ham is a fun (and delicious!) way to start the day.
Fluffy egg whites are mixed with bright, herby pesto and topped with savory cubed ham for a boost of protein and flavor.
Serve it over a slice of toasted sourdough and you’ve got a breakfast that’s both kid-approved and mom-approved.
It’s quick, colorful, and a fun nod to a classic—without any food coloring needed!
Green Eggs and Ham

Equipment
- 1 skillet
- 1 small bowl
Ingredients
- 1 tbsp organic butter
- 4 egg whites
- 2 tbsp pesto I like Alessi
- ⅓ cup uncured chopped ham
- 2 slices sourdough bread i like Izzio
Instructions
- In a small bowl, whish together4 egg whites, 2 tbsp pesto and ⅓ cup uncured chopped ham.
- Heat a skillet on a stove top over medium heat.
- Add 1 tbsp organic butter to the pan and melt.
- Pour the egg mixture into the skillet and stir frequently with a spatula.
- Once cooked through, remove from the skillet.
- Toast the 2 slices sourdough bread. Place half of the egg mixture on one slice of toast and half of the egg mixture onto the other slice of toast.
- You can top with salt and pepper as you please! Enjoy
