Grilled Enchiladas
Servings: 4
Ingredients
- 1 1/2 lb Boneless skinless chicken breast
- 1 tbsp Butter
- 2 tbsp Arrowroot
- 28 oz Canned tomato sauce
- 1/2 tsp Dried oregano
- 1/2 tsp Onion powder
- 1/4 tsp Chili powder
- 1/4 tsp Smoked paprika
- 1 Cinnamon (dash)
- 1 Cumin (dash)
- 12 Tortilla (Healthier Homemade Recipe or Siete)
- 2 cup Cheddar cheese (shredded from a block)
- 1 cup Sour cream
- 12 Foil (cut into squares)
Instructions
- In a sauce pan combine the butter with the chicken breast. Cook on medium until chicken is almost done. Remove the chicken
- Reduce the heat to low. Add in arrowroot and stir until a paste forms.
- Add in the tomato sauce and turn heat up to medium.
- Dice up the chicken and whisk it into the mixture.
- Add in the remaining ingredients except the tortillas.
- Bring to a boil and reduce heat to a simmer for 25 minutes.
Assembling
- Grab a foil square and spray with oil. Lay out a tortilla and spoon the chicken mixture into the center, topped with cheese and a spoonful of sour cream. Roll up
- Drizzle sauce over top with cheese and wrap up. Continue until all 12 tortillas are done.
- Preheat the grill to 375 f.
- Place the tortillas on the grill over indirect heat and cook for 15 minutes until bubbly. Enjoy!
