Grilled Enchiladas

Ingredients

  • 1 1/2  lb Boneless skinless chicken breast
  • 1 tbsp Butter
  • 2 tbsp Arrowroot
  • 28 oz Canned tomato sauce
  • 1/2 tsp Dried oregano
  • 1/2 tsp Onion powder
  • 1/4 tsp Chili powder
  • 1/4 tsp Smoked paprika
  • 1 Cinnamon (dash)
  • 1 Cumin (dash)
  • 12 Tortilla (Healthier Homemade Recipe or Siete)
  • 2 cup Cheddar cheese (shredded from a block)
  • 1 cup Sour cream
  • 12 Foil (cut into squares)

Instructions

  • In a sauce pan combine the butter with the chicken breast.  Cook on medium until chicken is almost done.  Remove the chicken
  • Reduce the heat to low.  Add in arrowroot and stir until a paste forms. 
  • Add in the tomato sauce and turn heat up to medium. 
  • Dice up the chicken and whisk it into the mixture. 
  • Add in the remaining ingredients except the tortillas. 
  • Bring to a boil and reduce heat to a simmer for 25 minutes. 

Assembling

  • Grab a foil square and spray with oil. Lay out a tortilla and spoon the chicken mixture into the center, topped with cheese and a spoonful of sour cream.  Roll up
  • Drizzle sauce over top with cheese and wrap up.  Continue until all 12 tortillas are done. 
  • Preheat the grill to 375 f. 
  • Place the tortillas on the grill over indirect heat and cook for 15 minutes until bubbly. Enjoy!
