Green Grinch Cookies

These green Grinch cookies are a fun and festive treat for the holidays. They are perfect for Christmas parties or a fun baking activity with kids. These cookies are easy to make and they are sure to be a hit with everyone who tries them. They use a classic and delicious sugar cookie base and have the perfect chewy texture! These are sure to liven up any cookie boxes you make for the holidays.

For the food dye, we love using Supernatural Kitchen for the red and green. They come our vibrant and beautiful but also use natural dye sources and nothing artificial.

Grinch Cookies

Ingredients

  • 1 cup Butter, softened
  • 1 1/2 cup Cane sugar
  • 2 Eggs
  • 2 tsp Vanilla bean paste (or vanilla extract works too)
  • 3 1/2 cup Einkorn flour (3 c all purpose flour)
  • 1/2 tsp Baking soda
  • 1 tsp Salt
  • 1 pouch Green food dye I use Supernatural Kitchen

Red Icing For Heart

  • 1 cup Powdered sugar
  • 1 tbsp Milk
  • 1 tbsp Butter, melted
  • 1 tsp Vanilla bean paste (or vanilla extract)
  • 1/4 tsp Salt
  • 1 pouch Red food dye I use Supernatural Kitchen

Instructions

  • Preheat oven to 350 degrees and grab 2 cookie sheets
  • In a mixing bowl with hand mixer or in a bowl of a stand mixer with paddle attachment, add 1 cup Butter, softened and 1 1/2 cup Cane sugar. Mix well for 3 minutes
  • Then add in 2 Eggs and 2 tsp Vanilla bean paste, mix again for 2-3 minutes until fluffy looking
  • Turn off mixer, add in 3 1/2 cup Einkorn flour, 1/2 tsp Baking soda, 1 tsp Salt, and 1 pouch Green food dye (about 2g of powdered dye or 10-15 drops liquid)
  • Mix on low until well incorporated, turn off mixer, do not overmix
  • Scoop out cookies, roll into a ball (I used about 1/4 c) and place on cookie sheet, do about 6 per cookie sheet
  • Bake at 350 degrees for 16-18 minutes until set
  • Let cookies cool on wire rack and bake until all are done
  • While cookies are cooling, mix in a small bowl 1 tbsp Butter, melted, 1 tbsp Milk, 1 tsp Vanilla bean paste extract or paste, 1/4 tsp Salt, 1 cup Powdered sugar, and about 1 pouch Red food dye or a few drops of liquid until its a deep red.
  • Whisk well, pour into a sandwich bag
  • Once cookies are cooled, cut a small bit off the corner of the sandwich baggie and draw a small heart on the cookie to the right side (can practice on a paper towel if desired)
  • Allow icing to dry before storing! Enjoy!

Notes

storage
  • store flat in a ziploc bag once icing has cooled. Will last for 3-4 days at room temperature or you can freezer for up to 2 months
