This Easy Grinder Salad is a refreshing twist on the classic Italian grinder sandwich. It’s packed with flavor and perfect for a quick and easy lunch or dinner. Ingredients
Salad
- 6 oz Salami (I love the Aldi Italiano version)
- 8 oz Fresh mozzarella (Love the Aldi brand here as well)
- 6 cup Romaine (rinsed and chopped)
- 2 Peppers (any color you like, chopped)
- 4 oz Banana pepper (drained and chopped)
- 1 cup Tomatoes (chopped)
Dressing
- 1/3 cup Olive oil
- 1/4 cup Lemon juice (fresh is best)
- 1 tsp Italian seasoning
- 1 tbsp Honey
- 2 tsp Dijon mustard
- 1 tsp Pink himalayan salt
- 1/2 tsp Black pepper
Instructions
Make Dressing
- Add 1/3 cup Olive oil, 1/4 cup Lemon juice, 1 tsp Italian seasoning, 1 tbsp Honey, 2 tsp Dijon mustard, 1 tsp Pink himalayan salt, and 1/2 tsp Black pepper. You can use right away or store in the fridge and use as you go.
Make Salad
- Prepare 6 oz Salami, 8 oz Fresh mozzarella, 6 cup Romaine, 2 Peppers, 4 oz Banana pepper, 1 cup Tomatoes and toss together in a large bowl. Make sure its all blended well. You can toss in mason jars or another type of portable container to grab and go.
Notes
What to eat with it?
- You can enjoy as a salad alone, add to a wrap or tortilla, or you can mix this up and eat as a side with another main dish or pizza night.
