High Protein Pumpkin Spice Mousse

Ingredients

  • 16 oz Whole milk cottage cheese
  • 1/2 cup Canned pumpkin
  • 1/3 cup Turbinado sugar
  • 1/4 cup Maple syrup
  • 2 tsp Ground cinnamon
  • 1/8 tsp Nutmeg
  • 1/2 tsp Ginger powder
  • 1/4 tsp Allspice
  • 1/8 tsp Salt

Instructions

  • Set up a food processor.
  • Strain 16 oz Whole milk cottage cheese through a mesh strainer to remove excess liquid.
  • Add to a food processor with 1/2 cup Canned pumpkin.
  • Then add 1/3 cup Turbinado sugar, 1/4 cup Maple syrup, 2 tsp Ground cinnamon, 1/2 tsp Ginger powder, 1/8 tsp Nutmeg, 1/4 tsp Allspice & 1/8 tsp Salt.
  • Puree in food processor for 1-2 minutes until creamy and incorporated. Scrape down the bowl and process again until all is mixed and processed.
  • Add to 4 small containers and store with lids for up to 5 days. Enjoy with homemade whipped cream and graham cracker crumbs if desired.

  • will last in the fridge for up to 5 days. you can freeze for up to 2 months.
