Homemade Ghost Graham Crackers and Goblin Dip
This year for my daughter’s class we needed to bring in a healthy treat. It’s Halloween so I’m not sure that healthy and treat belong in the same sentence. My daughter is in second grade and she is pretty crafty so the first thing that popped in her head were the graham crackers off of our site. We put our heads together and came up with homemade ghost graham crackers and goblin dip.
Can we talk about how Kelli’s gift is truly baking and sweet treats? This recipe will utilize the homemade graham crackers off of our site along with the homemade caramel Kelli created.
This recipe has the zing of Greek yogurt (and protein) along with the sweetness of caramel and white chocolate.
Our Favorite Swaps
This recipe is created using super simple ingredients. One of our favorite swaps is simple Nestle white chocolate chips. Chocolate chips are a place where many brands have a ton of unnecessary additives. This is a simple way to clean up sweet treats. We also use coconut sugar instead of brown sugar and all purpose einkorn flour instead of regular all purpose flour. This recipe is free of food coloring, which is a bonus for a school Halloween party! A simple way to keep the apples in the dip from turning brown is to either sprinkle with a few tsp. of lemon juice or soak the apples in water and honey.
Ingredients:

- 3 Ingredients caramel recipe here
- 1 pkg. white chocolate chips melted
- optional- 1/2 cup chocolate chips melted
- The Dip:
- 1 package Cream Cheese
- 1 cup Greek Yogurt
- 1 cup mini Simply chocolate chips
- 1 tsp. lemon (to keep the apples from turning brown)
- 1 apple finely chopped
- 2 TBSP. maple syrup
- 1 tsp. vanilla
- 1 tsp. cinnamon
Making the Graham Crackers
First, make you graham cracker recipe and follow the instructions exactly like our original recipe, but this time cut the dough into little ghosts. The bake time will be dependent on how large you cut them, but start checking them at the 8-10 minutes mark. For my daughters class, I doubled the batch. You want them done, but not brown on the edges. Let them cool on the baking sheet and then line them out on parchment paper.
Now comes the fun part! Follow the instructions on the back of the white chocolate chip bag to get the perfect melted chocolate. Dip the top end of the graham crackers into the white chocolate and let the extra drizzle back into the bowl. Lay the graham crackers down on the parchment paper and let cool to room temperature. Continue this process until all of the graham crackers are coated. Use the melted chocolate chips to created eyes and a mouth.
Making the Dip
This Goblin dip is super fun and easy to make. I like to make the caramel sauce ahead of sauce since it will last one month in the refrigerator. Just bring it to room temperature so that it is easy to blend in. Set the cream cheese out and bring to room temperature.
Cut up the apples into super small cubes. Be sure they are small enough to not be a choking hazard. Coat with lemon juice. Combine all of the dip ingredients into the dip except for the chocolate chips. Mix together and the last step is to add in the chocolate chips. Stir the chocolate chips in. Be sure to keep refrigerated. To bring it to class, I like to get little containers for the dip. This cuts down on the mess and makes it easy for little ones to eat in class.
I like to place the ghosts and the dip in a cute little baggy and tie it together so that it is easy for the kids to eat.
